Jackfruit Vegan Tacos Recipe

Jackfruit Tacos

Ingredients:

  • 2 (20 ounce) cans jackfruit in brine - drained, rinsed, and cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 tablespoon water, or more as needed
  • 2 tablespoons taco seasoning mix, or to taste
  • 4 taco shells
  • cup salsa, or to taste

Directions:

  1. Heat the vegetable oil in a small saucepan over medium heat.
  2. Add the jackfruit pieces to the pan and cook, stirring frequently, for about 2 to 3 minutes until slightly golden.
  3. Add 1 tablespoon of water and the taco seasoning mix. Stir the mixture well, ensuring that the jackfruit is fully coated. Cook for another 1 minute.
  4. If the mixture seems too dry, add water 1 tablespoon at a time, stirring between additions, until you reach the desired consistency.
  5. Once the jackfruit is ready, take each taco shell and place a small amount of the jackfruit mixture into it.
  6. Top each taco with approximately 2 tablespoons of salsa, adjusting the amount to taste.
