Jackfruit Vegan Tacos Recipe

Jackfruit Tacos
Ingredients:
- 2 (20 ounce) cans jackfruit in brine - drained, rinsed, and cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 tablespoon water, or more as needed
- 2 tablespoons taco seasoning mix, or to taste
- 4 taco shells
- cup salsa, or to taste
Directions:
- Heat the vegetable oil in a small saucepan over medium heat.
- Add the jackfruit pieces to the pan and cook, stirring frequently, for about 2 to 3 minutes until slightly golden.
- Add 1 tablespoon of water and the taco seasoning mix. Stir the mixture well, ensuring that the jackfruit is fully coated. Cook for another 1 minute.
- If the mixture seems too dry, add water 1 tablespoon at a time, stirring between additions, until you reach the desired consistency.
- Once the jackfruit is ready, take each taco shell and place a small amount of the jackfruit mixture into it.
- Top each taco with approximately 2 tablespoons of salsa, adjusting the amount to taste.
