Directions
- In a large glass or ceramic bowl, whisk together the olive oil, lime juice, lime zest, garlic, cumin, red pepper flakes, and chipotle pepper.
- Add the beef sirloin cubes to the marinade and toss to coat evenly.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to 2 hours, allowing the sirloin to marinate.
- Preheat your grill to medium-high heat and lightly oil the grate to prevent sticking.
- Remove the sirloin from the marinade, discarding the marinade.
- Thread the marinated sirloin, red bell pepper, green bell pepper, and onion onto the skewers, alternating between the ingredients.
- Place the skewers on the preheated grill and cook for about 4 minutes per side, or until the sirloin is browned and the vegetables are tender.
