Individual Beef Wellingtons Recipe

Ingredients:

  • 1 pound fresh mushrooms, sliced
  • cup dry sherry
  • cup chopped onion
  • cup butter
  • cup chopped parsley
  • 6 (8 ounce) fillets beef tenderloin
  • 1 (17.5 ounce) package frozen puff pastry, partially thawed

Directions:

  1. Gather all the ingredients.
  2. In a large skillet, combine the mushrooms, sherry, onion, butter, and parsley. Cook over medium heat, stirring occasionally, until all the liquid is absorbed and the mushrooms are browned, about 15-20 minutes.
  3. Allow the mushroom mixture to cool before covering the top of each beef tenderloin fillet with it.
  4. Cut each partially thawed puff pastry sheet into 3 rectangles, creating a total of 6 pieces of puff pastry.
  5. Roll out each puff pastry rectangle to about 1/4-inch thickness. Place a beef fillet in the center of each, fold up the pastry, and seal all edges, ensuring that the seams are not too thick.
  6. Place the wrapped fillets on a baking sheet, cover them with plastic wrap, and refrigerate for at least 35 minutes before baking.
  7. Preheat your oven to 425F (220C). Bake the Beef Wellingtons for 25 minutes, or until the internal temperature reaches 130F (54C) for medium-rare.
  8. Once done, let the Beef Wellingtons rest for 5 minutes before serving.
  9. Serve and enjoy your delicious Beef Wellington!
