Individual Beef Wellingtons Recipe

Ingredients:
- 1 pound fresh mushrooms, sliced
- cup dry sherry
- cup chopped onion
- cup butter
- cup chopped parsley
- 6 (8 ounce) fillets beef tenderloin
- 1 (17.5 ounce) package frozen puff pastry, partially thawed
Directions:
- Gather all the ingredients.
- In a large skillet, combine the mushrooms, sherry, onion, butter, and parsley. Cook over medium heat, stirring occasionally, until all the liquid is absorbed and the mushrooms are browned, about 15-20 minutes.
- Allow the mushroom mixture to cool before covering the top of each beef tenderloin fillet with it.
- Cut each partially thawed puff pastry sheet into 3 rectangles, creating a total of 6 pieces of puff pastry.
- Roll out each puff pastry rectangle to about 1/4-inch thickness. Place a beef fillet in the center of each, fold up the pastry, and seal all edges, ensuring that the seams are not too thick.
- Place the wrapped fillets on a baking sheet, cover them with plastic wrap, and refrigerate for at least 35 minutes before baking.
- Preheat your oven to 425F (220C). Bake the Beef Wellingtons for 25 minutes, or until the internal temperature reaches 130F (54C) for medium-rare.
- Once done, let the Beef Wellingtons rest for 5 minutes before serving.
