Bourbon Pecan Chicken Recipe

Ingredients
- cup finely chopped pecans
- cup dry bread crumbs
- 8 skinless, boneless chicken breast halves
- cup clarified butter, melted
- cup Dijon mustard
- cup dark brown sugar
- 2 tablespoons bourbon whiskey
- 2 tablespoons soy sauce
- 1 teaspoon Worcestershire sauce
- cup unsalted butter, chilled and cut into small cubes
- cup sliced green onions
Directions
- In a bowl, stir together the chopped pecans, bread crumbs, and 2 tablespoons of melted clarified butter. Spread the mixture out evenly on a plate.
- Press each chicken breast into the mixture, coating both sides thoroughly.
- Heat the remaining 2 tablespoons of clarified butter in a large skillet over medium heat. Place the coated chicken breasts into the pan and cook, turning occasionally, until both sides are browned and the chicken is fully cooked, about 10 minutes per side.
- Meanwhile, in a small saucepan, whisk together Dijon mustard, brown sugar, bourbon, soy sauce, and Worcestershire sauce until smooth.
- Bring the mixture to a simmer over medium-low heat, then remove from the burner. Gradually whisk in the cold unsalted butter cubes, one piece at a time, until fully incorporated. Do not return to the heat after adding the butter.
- Arrange the cooked chicken breasts on a large serving plate. Pour the prepared sauce over the chicken and garnish with sliced green onions.
