Butter-Baked Tilapia and Coconut Rice

  • Rice: 2 teaspoons olive oil, or to taste
  • 1 cup long-grain rice
  • 2 cups coconut milk
  • Salt and ground black pepper to taste
  • Fish: 2 (5 ounce) fillets tilapia
  • 1 pinch lemon-pepper seasoning, or to taste
  • 1 stick salted butter

Directions

  1. Preheat the oven to 400F (200C).
  2. Prepare the rice: Heat olive oil in a large skillet over medium heat. Add rice and cook, stirring occasionally, until it turns golden and toasted, about 2 to 3 minutes.
  3. Add coconut milk: Pour in coconut milk, and season with salt and black pepper. Stir well and bring to a boil.
  4. Simmer: Once boiling, reduce the heat, cover the skillet, and let it simmer for about 15 minutes, or until the liquid is absorbed and the rice is tender.
  5. Prepare the fish: While the rice is cooking, season the tilapia fillets on both sides with lemon-pepper seasoning. Place the fillets in a glass baking dish.
  6. Add butter: Cut the stick of butter in half and place both pieces directly on top of the fillets.
  7. Bake the fish: Place the pan in the preheated oven and bake for 5 to 7 minutes, or until the butter is fully melted and bubbling.
  8. Finish baking: Once the butter is melted, ladle some of the butter back over the fish. Lower the oven temperature to 330F (165C) and continue baking for an additional 3 to 5 minutes, or until the fish looks almost cooked through.
  9. Golden finish: Increase the oven temperature back to 400F (200C) and bake for a few more minutes until the edges of the fish turn golden brown.
  10. Serve: Plate the rice and top with the tilapia fillets. Pour any remaining butter over the fish for extra flavor.

Cook's Note

For an added twist, try adding cilantro to the fish while it's baking, and sprinkle some fresh parsley into the rice for extra freshness!
