Ingredients

  • cup reduced-sodium soy sauce
  • cup chicken broth
  • cup pineapple juice

  • 1 teaspoon sesame oil
  • 1 teaspoon minced fresh ginger
  • teaspoon red pepper flakes (or more to taste)

  • 3 teaspoons cornstarch
  • 2 pounds pork shoulder roast
  • 1 teaspoon sesame seeds (for garnish)

Directions

Step 1: In a medium saucepan over medium heat, combine soy sauce, chicken broth, pineapple juice, brown sugar, dry sherry, honey, garlic, sesame oil, ginger, and red pepper flakes. Stir everything together until well combined.

Step 2: In a small bowl, whisk together the cold water and cornstarch until you get a smooth slurry. Add this mixture to the saucepan and stir to incorporate.

Step 3: Bring the sauce to a boil. Once boiling, reduce the heat and let it simmer for 3 to 4 minutes, stirring occasionally, until it begins to thicken. Once done, remove the sauce from the heat and set it aside.

Step 4: Place the pork shoulder roast into a slow cooker. Pour the teriyaki sauce over the pork, ensuring its well-coated.

Step 5: Set the slow cooker to Low and cook for 6 to 8 hours, or until the pork is tender and easily shreds with a fork.

Step 6: Once the pork is fully cooked, remove it from the slow cooker and let it rest for 5 minutes. Use two forks to shred the meat into bite-sized pieces.

Step 7: Return the shredded pork back into the slow cooker and mix it with the sauce. Let it warm up for an additional 5 minutes.
