Chinese Napa Cabbage Salad Recipe

This delightful Crunchy Ramen Salad is a perfect combination of textures and flavors. With a satisfying crunch from toasted ramen noodles, sesame seeds, and almonds, and a tangy, sweet dressing, it's a refreshing and easy side dish for any occasion.

Ingredients

  • 1 (3-ounce) package chicken-flavored ramen noodles
  • cup butter
  • cup toasted sesame seeds
  • cup blanched slivered almonds
  • 1 large head napa cabbage, shredded
  • 6 green onions, chopped
  • cup vegetable oil
  • cup rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 cup white sugar

Directions

  1. Begin by crushing the ramen noodles. Place them in a medium skillet and melt the butter over medium heat.
  2. Once the butter is melted, add the crushed noodles to the skillet and cook, stirring occasionally, until the noodles are golden brown and crispy.
  3. Add the slivered almonds and toasted sesame seeds to the skillet. Stir frequently to prevent burning and ensure the ingredients are evenly toasted.
  4. Once the noodles and nuts are browned and toasted, add the seasoning mix from the ramen package. Stir everything together and let it cool down.
  5. In a large mixing bowl, combine the cooled noodle mixture with the shredded napa cabbage and chopped green onions. Toss gently to combine all ingredients.
  6. For the dressing, whisk together the vegetable oil, rice wine vinegar, soy sauce, sesame oil, and sugar in a small bowl until the sugar is dissolved and the mixture is smooth.
  7. Pour the dressing over the salad mixture, then toss everything together to evenly coat. Serve immediately or refrigerate until ready to serve.

I have tried several of these "chinese slaw" recipes. This is the best. the addition of the sesame oil makes a world of difference. It has been a requested recipe, even by people who already make a version of this. I keep the 3 components in separate containers in the frig and mix it up as I feel the urge. It stays crunchy and is a great quick lunch or dinner side dish. A BIG hit at gatherings, too.

Like others suggested I kept the ingredients in 3 separate containers. My ramen was hard to crumble so I used my food processor to chop it. I used the slicing disk for the cabbage (the grater turned it into mush) and used the grater disk to grate a few carrots. I mixed the dressing ingredients in a small jar (also added a pinch of ginger) by shaking the jar. Easy to store then also. Nice to have a new salad to serve to my vegetarian friends. Everyone really liked it.

This was awesome! I added 1/2 cup of sunflower seeds and only used a few tablespoons of sesame seeds, due to lack of them, browning them in 1/2 ghee & 1/2 olive oil. I substituted the vegetable in the dressing with sesame oil (which I do have a lot of currently). We had leftover chicken that I tossed in but with all of the flavor and crunch from the seeds & nuts, it isn't needed. Definitely putting this into the rotation!

Great salad! It was a hit for Father’s Day dinner. I prepped the entire salad I’m the morning and then tossed it all together just before serving dinner, so it wouldn’t get soggy. I followed the recipe as written and then added water chestnuts and mandarin oranges. I only used half of the dressing so I will save it for another salad. Next time maybe cut the dressing portion of the recipe I half.

I make this all the time but add carrots and broccoli. I usually make it for lunches for the entire week by having 2 zip locks, and a bottle for the dressing. Put all "crunchy" items in a bad, ramen, almonds, sesame seeds. Then put all veggies in a separate bag that way nothing looses it's crunch. Bring the dressing along and toss before eating! If I add chicken I can easily get a weeks worth of healthy salads out of this recipe!

This tasted good. I thought 1/4 cup butter was too much and only used 1/2 tablespoon to cook my topping. I cut the sugar by half, and I would prefer a ratio of less vinegar to oil. Overall it turned out fine, it's just not my favorite recipe for this salad.

I made some changes to work with what I had in the fridge, used regular cabbage, added some fried mushrooms with shallots (done before the almonds , ramen, sesame) and it was delicious!

First time I made this as a diabetic friendly dish by subbing the sugar with Splenda. Was great and my husband couldn't get enough. Now i have tweaked this recipe to be Keto friendly too by subbing the ramen noodle pack with chicken soup flavoring and added pork rind pieces right before serving.) I also added shredded chicken! ) I love being able to take a recipe and tweak it to my dietary needs and i know some people get annoyed at this but everyone want great recipes to add to their personal repertoire. MADE SOME CHANGES- I used this recipe since it was so similar to one I have at home in Calif. In that recipe, I don't use the ramen seasoning packet, and instead of vegetable oil, it called for peanut oil. Also, other good additions are shredded carrot and chopped cilantro. The sesame seed, almonds, and ramen noodles can be toasted on a sheet in a toaster oven rather than using butter on the stove. Four stars for using that Ramen packet. too much salt and chemicals to suit me!

I had a huge head of napa cabbage and wanted to try something different-- this was delicious! I note that some have recommended using about half the seasoning packet from the ramen noodles. I used all of the packet from an organic "Asian vegetable" ramen which seems to have considerably less sodium than the regular store brands, and the salt level seemed just right. To turn it into a vegetarian main course salad I also sauteed a box of Quorn "naked" cutlets in the same skillet in which I'd cooked the noodles, almonds and sesame seeds and then diced them before adding it all to the salad. I also LOVE sesame seeds and toasted sesame oil, and thought the large quantity of sesame seeds gave it a great taste and texture. I'm embarrassed to admit that my husband and I pretty much devoured the whole thing. We'd washed and chopped the napa cabbage when we brought it home a couple of days before using it, making this salad incredibly quick and easy to put together. I'll definitely be making it again!

Ok... WOW! This is delicious!! The picky eater and I are having this, this evening and its ah-mazing! Used 1/2 head Regular cabbage, cider vinegar, two whole green onions. Thats what I had. Added 1/2 sliced red pepper and some carrot for color. Sauteed some chicken tenders in the pan after I toasted the noodles and added 1/4 cup of the dressing in w it while they sauteed. This is quick and easy.. The only problem, next time I'll need to triple this recipe for my family of 7!

Great Party or Girls Night dish to bring- travels well! I have been making versions of this salad for years and it was always a hit when I would bring it to Bunco Night! Each time it would turn out differently because I didn’t commit to one recipe. I tried this recipe and now I have a recipe to share when asked. I add cilantro, carrots for color and optional adds are chicken, dried cranberries or roasted corn depending on the season. This recipe is so easy as a last minute dish as well!

This salad is tasty but I have a hard time browning the slivered almonds and sesame seeds. The sesame seeds tend to burn if they are done at the same time. Next time I’ll add them after the almonds.

Very tasty. I didn't have the sesame seeds so I substituted everything bagel seasoning. Turned out fantastic.

I used less than half the sugar. Chicken or shrimp or poached salmon can be added to this for a complete meal.

I thought this was a nice change of pace for a salad. I made the recipe exactly as written and added in leftover chopped chicken thigh meat. It was well balanced and loved the crunch bits.
