Original Recipe (1X) yields 10 servings

  • 10 (4 ounce) fillets tilapia
  • Salt and ground black pepper to taste
  • cup all-purpose flour
  • 1 cup buttermilk
  • 1 large egg
  • cup all-purpose flour
  • cup yellow cornmeal
  • 2 tablespoons seafood seasoning (such as Old Bay)
  • teaspoon baking powder
  • teaspoon baking soda
  • Vegetable oil for frying

Directions

Step 1: Season the tilapia fillets with salt and pepper on both sides. Lightly dust the fillets with cup of all-purpose flour.

Step 2: In a medium bowl, beat the buttermilk and egg together until well combined.

Step 3: In another bowl, mix together the remaining cup of all-purpose flour, yellow cornmeal, seafood seasoning, baking powder, and baking soda.

Step 4: Dip the flour-dusted fillets into the egg mixture, making sure they are fully coated, then dredge them in the seasoned flour mixture, pressing gently to ensure the coating sticks.

Step 5: Heat vegetable oil in a large frying pan or deep fryer over medium-high heat to about 350F (175C).

Step 6: Working in batches, fry the fillets in the hot oil for about 2 minutes on each side or until they are golden brown and crispy.

Step 7: Once fried, transfer the fillets to a paper towel-lined plate to drain excess oil. Immediately season with salt while the fillets are still hot.
