Tofu and Veggies in Peanut Sauce Recipe
Peanut Tofu Stir-Fry
This simple and flavorful stir-fry combines tofu, fresh vegetables, and a rich peanut sauce, perfect for a quick and satisfying meal.
Ingredients
- 1 tablespoon peanut oil
- 1 pound firm tofu, cubed
- 1 small head broccoli, chopped
- 1 small red bell pepper, chopped
- 5 fresh mushrooms, sliced
- cup peanut butter
- cup hot water
- 2 tablespoons vinegar
- 2 tablespoons soy sauce
- 1 tablespoons molasses
- Ground cayenne pepper, to taste
Directions
Step 1: Heat peanut oil in a large skillet or wok over medium-high heat.
Step 2: Add the cubed tofu, broccoli, bell pepper, and mushrooms to the skillet. Saut for about 5 minutes, or until the vegetables begin to soften.
Step 3: In a small bowl, whisk together peanut butter, hot water, vinegar, soy sauce, molasses, and cayenne pepper.
Step 4: Pour the peanut butter mixture over the sauted vegetables and tofu. Stir well to coat everything evenly.
Step 5: Reduce the heat to low and let the dish simmer for 3 to 5 minutes, or until the vegetables are tender-crisp and the sauce thickens slightly.
