Polish Noodles (Cottage Cheese and Noodles) Recipe

  • cup butter
  • 1 small onion, diced
  • 1 (16 ounce) package egg noodles
  • 1 (16 ounce) cottage cheese
  • cup sour cream
  • teaspoon sea salt
  • teaspoon ground black pepper

Directions

Step 1: Melt butter in a saucepan over medium heat.

Step 2: Cook and stir onion in melted butter until softened, about 7 to 10 minutes.

Step 3: Meanwhile, bring a large pot of lightly salted water to a boil.

Step 4: Add egg noodles and cook, stirring occasionally, until partially cooked, about 5 minutes.

Step 5: Drain the noodles and return them to the pot.

Step 6: Pour the onion mixture over the noodles, then stir in cottage cheese, sour cream, salt, and pepper.

Step 7: Cook over medium heat, stirring occasionally, until the sauce is heated through and the noodles are tender but firm to the bite, about 5 to 8 minutes.

I am a big fan of casseroles, and I recently made a pasta casserole using my Instant Pot. I started by sautéing some onions and adding 2 tablespoons of chopped garlic. Then, I mixed in some sour cream and 24 ounces of cottage cheese. After combining everything in a casserole dish, I sprinkled smoked paprika on top and added 4 ounces of cheddar cheese. I baked the casserole for 35 minutes and finished it off by broiling it for 2 additional minutes.

This dish holds a special place in our hearts from childhood to now! My family always used dry cottage cheese, which is rare and pricey these days. We now use Farmers Cheese as a substitute, along with a generous 8oz bag of finely shredded Swiss cheese mixed into the hot noodles. Combining the noodles, cheese, and onions allows the flavors to meld together beautifully. I'm currently preparing it and can't wait to enjoy it!

My family absolutely adores this dish! It's the epitome of simple comfort food. We followed the recipe as instructed a couple of times, and then we decided to take it up a notch by incorporating 8 oz of sliced mushrooms and 2 cups of shredded cabbage while sautéing the onions, inspired by traditional pierogi fillings. I followed the recipe exactly, but since we really enjoy onions, I included two whole onions, chopped and sautéed in butter. It turned out much better, especially if you're a fan of onions.

I have fond memories of a childhood favorite dish made with sautéed cabbage and onions in butter, mixed with cottage cheese and hot noodles, then baked for 30 minutes.
