Ingredients
- 6 pounds beef short ribs
- 1 cup coarse salt, or as needed
- 6 medium limes, cut into wedges
Directions
- Preheat an outdoor grill to medium-high heat and lightly oil the grate.
- Generously coat the beef short ribs with coarse salt, ensuring an even layer.
- Place the ribs on the preheated grill and cook for 5 to 7 minutes per side. The meat should easily pull away from the bone when done. Use an instant-read thermometer to check the internal temperature; it should reach 130F (54C).
- Once cooked, transfer the ribs to a large glass serving dish.
- Squeeze the lime wedges over the ribs, allowing the juice to soak into the meat.
- Serve immediately while hot and juicy!
