  • 6 medium limes, cut into wedges

Directions

  1. Preheat an outdoor grill to medium-high heat and lightly oil the grate.
  2. Generously coat the beef short ribs with coarse salt, ensuring an even layer.
  3. Place the ribs on the preheated grill and cook for 5 to 7 minutes per side. The meat should easily pull away from the bone when done. Use an instant-read thermometer to check the internal temperature; it should reach 130F (54C).
  4. Once cooked, transfer the ribs to a large glass serving dish.
  5. Squeeze the lime wedges over the ribs, allowing the juice to soak into the meat.
  6. Serve immediately while hot and juicy!
