Ground Beef Stroganoff Recipe
This delicious and creamy Beef Stroganoff served over wide egg noodles is a comforting dish that is easy to prepare. With a rich, savory sauce made from ground beef, onions, mushrooms, and sour cream, it's sure to become a family favorite!
Ingredients
- 1 pound ground beef
- cup chopped onion
- 1 (4.5 ounce) can mushrooms, drained
- teaspoon garlic powder
- teaspoon mustard powder
- cup sour cream
- cup mayonnaise
- cup beef broth
- 1 (8 ounce) package wide egg noodles
Directions
- Start by breaking up the ground beef into a large skillet. Add the chopped onion, drained mushrooms, garlic powder, and mustard powder to the skillet.
- Cook over medium heat, stirring frequently, until the meat is fully browned and the onions become tender. Once cooked, drain off any excess fat from the pan.
- In a small bowl, combine the sour cream, mayonnaise, and beef broth. Stir this mixture into the beef mixture in the skillet.
- Reduce the heat to low and let it simmer for 10-15 minutes. Stir occasionally but be gentle to avoid over-mixing.
- While the sauce is simmering, bring a large pot of water to a boil. Add the wide egg noodles and cook according to the package instructions until tender.
- Once the noodles are done, drain them and serve them hot on plates. Spoon the beef stroganoff sauce over the noodles, and enjoy your meal!

With a splash of worchesteshire, 12 oz. of sour cream, and less mayo...this recipe is very good. (It can get tangy if you use Miracle whip. I used Hellman's). I didn't think it was bland at all. It tasted exactly like I expected stroganoff to taste, only better!

i don't understand the negative reviews here. obviously, this is not a gourmet recipe. but it is quick and filling comfort food that also happens to taste great, and is very easy to modify a bit here and there to suit your tastes. after i browned the beef, i rinsed it once to help eliminate grease. i browned the onions and mushrooms separately in a little butter, and i think that helped the flavor a lot. i increased the garlic powder a bit, and added a few dashes of dried dill. i decreased the mayo and increased the sour cream. also added just a bit of worchestershire sauce. although it doesn't look too spectacular, it tastes yummy!

This recipe is missing a key ingredient. You can not get an authentic strogenoff flavor without adding worchestershire sauce. It's the key to a great sauce. With that being said, here's what to omit -- the mayo. It's unnecessary and you don't need the mustard spice either. When you brown your beef, increase the garlic to 1 tsp. add in 1 tsp. of black pepper and 1 Tbsp. of worchestershire sauce. Your beef will get a savory flavor. In place of the mayo use 1 can cream of mushroom soup and decrease the beef stock to 1/4 cup. (I like to add an additional Tbsp. of worchestershire to the sauce.) Do not cover the sauce while simmering and it will thicken better.

I've been making this dish for many years but I use 1 1/2 to 2lbs. of ground beef, 1 diced med. size onion, I don't use mustard or mayo and I up the sour cream to between 3/4 and 1 cup depending on how many egg noodles and ground beef you use. I also add garlic powder to taste or minced garlic. I also use a 16 oz. bag of cooked egg noodles in mine. Salt and pepper to taste. I sauté the onions and sliced fresh mushrooms (or canned drained mushrooms whichever you have on hand) in with my ground beef. Drain the ground beef then add in your drained cooked noodles and stir in your sour cream last. Salt and pepper to taste. Makes for a fast, filling and delicious meal. I like to mix the noodles in with every thing else. That way your noodles stay moist and don't clump together under your meat mixture and they don't dry out when storing the leftovers.

I love Beef Stroganoff! I thought this recipe was perfect because I had some ground beef to use up. I read reviews on it, like I always do on this site. I added Worcestershire to the beef, used fresh garlic, sautéed onion & fresh mushrooms separately first in butter, used 3/4 sour cream & 1/4 mayo. Added pepper to the beef mixture at the end. I kept staring at my cream of mushroom can, but I didn’t use it. It tastes great, but it can use a little more thickness. I’ll make it again using the mushroom soup. I let my husband add his own salt when served because I don’t cook with salt. Long story short- we devoured it as is!!

After reading many reviews I made the following changes to my dish. I used 12 ounces of ground beef, 1/3 cup of chopped onion and a pad of butter sautéed ingredients.. I then added a can of cream of mushroom soup , 1/2 cup of beef broth,Tablespoon of mayonnaise, 2 tbsp. of sour cream. I then added salt and pepper, dry mustard & garlic powder. Mixed it all up and simmer for about 10 minutes. And then added couple of dashes of Worcestershire sauce and gravy Master for color. Sauce was a bit too thick for me so I added a ladle or so of pasta water. Served over noodles with broccoli

Not bad, considering I don't particularly care for beef stroganoff. But this was a breeze! I did tweak it some. I doubled the recipe, using 2 lbs of ground beef and 1 lb of egg noodles. Hold the mayo and the broth, instead I used 8 oz of sour cream, 1 can of cream of mushroom soup, and powdered beef base. Watery sauce was not a problem this way. I also used double amounts of garlic, onion and mustard powders, as well as salt to taste and lots of black pepper, as nothing goes better with beef and noodles than black pepper. My husband wanted the noodles mixed in Hamburger Helper style, so we did that too. Yum!

Family Loved this! I, by habit, added ham seasoning to ground beef and used the advice of a reviewer to up the sour cream (12 oz), lower the mayo (2 TBLS) and added Worcestershire sauce (1 tsp). I, by habit again, added a can of green beans. My son's words; "this is better then hamburger helper Mom."

For those who say it is thin, try adding in some flour to the ground beef after it is cooked to make a roux, then add the remaining ingredients. Also as others have said, "add some Worcestershire sauce". Makes all the difference.

Cut mayo to 1/4 cup and increased sour cream to 3/4 cup, sautéed fresh mushrooms with the onion separately, then added the beef after draining it, also added Worcestershire sauce to cooking beef... next time would cut back a bit on the mustard.... overall delicious

Four stars as-is because I used fresh mushrooms and followed the suggestions to reduce the mayo (1/4 cup) and increase the sour cream (3/4 cup). Added some white wine, increased spices to taste and added Worcestershire sauce (although it tasted great even before I put that in). Yummy dinner!

I used cream of mushroom soup instead of canned mushrooms and also chicken stock instead of beef stock. Also, I added extra salt and pepper. Otherwise, this was a great start.

I used fat free yogurt instead of sour cream and omitted mushrooms and chopped up a stalk of celery instead. I also added a couple shakes of Worcestershire and some fresh ground black pepper. I served it on Banzo shell pasta. It was a huge hit. I will definitely be making this again. Its also pretty quick and easy to prep. I didn't time myself but seems we were eating within about 20 minutes.
