Pasta de Sardine Recipe

Ingredients
- 8 ounces dry fettuccine pasta
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, crushed
- 1 medium lemon, juiced
- 1 (3.75 ounce) can sardines in tomato sauce
- cup freshly grated Parmesan cheese
- 1 pinch red pepper flakes, or to taste
Directions
- Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until almost tender, about 8 minutes.
- While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the chopped onion and cook until it starts to soften, about 3 minutes.
- Add the crushed garlic to the skillet and cook for about 1 minute, until fragrant.
- Pour in the sardines along with the tomato sauce. Stir everything together and cook for about 3 minutes, until heated through. Reduce the heat to low and keep the sauce at a simmer.
- Drain the cooked pasta and add it directly into the skillet with the sauce. Stir to combine and cover the pan. Turn off the heat and let it sit for 3 minutes, allowing the flavors to meld.
- Squeeze the fresh lemon juice over the pasta and divide it into four serving plates.
- Garnish each plate with freshly grated Parmesan cheese and a pinch of red pepper flakes for an extra kick.
