Pasta de Sardine Recipe

Ingredients

  • 8 ounces dry fettuccine pasta
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, crushed
  • 1 medium lemon, juiced
  • 1 (3.75 ounce) can sardines in tomato sauce
  • cup freshly grated Parmesan cheese
  • 1 pinch red pepper flakes, or to taste

Directions

  1. Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until almost tender, about 8 minutes.
  2. While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the chopped onion and cook until it starts to soften, about 3 minutes.
  3. Add the crushed garlic to the skillet and cook for about 1 minute, until fragrant.
  4. Pour in the sardines along with the tomato sauce. Stir everything together and cook for about 3 minutes, until heated through. Reduce the heat to low and keep the sauce at a simmer.
  5. Drain the cooked pasta and add it directly into the skillet with the sauce. Stir to combine and cover the pan. Turn off the heat and let it sit for 3 minutes, allowing the flavors to meld.
  6. Squeeze the fresh lemon juice over the pasta and divide it into four serving plates.
  7. Garnish each plate with freshly grated Parmesan cheese and a pinch of red pepper flakes for an extra kick.
