Instant Pot Collard Greens Recipe

Ingredients

  • 1 bunch collard greens
  • 4 thick slices bacon, cut into 1-inch pieces
  • 4 cups water
  • 2 tablespoons white vinegar
  • 4 cups chicken broth
  • Salt to taste

Directions

  1. Rinse collard greens thoroughly, removing and discarding the tough stems. Chop the greens to your desired size.
  2. Turn on your multi-functional pressure cooker (such as Instant Pot) and select the "Saut" function. Add the bacon pieces and cook until they turn brown and crisp, about 5 minutes. Once done, turn off the "Saut" function.
  3. Pour in the water and white vinegar. Use a spatula to scrape the bottom of the pot to release any bits of bacon that may have stuck to the surface.
  4. Add the chopped collard greens to the pot and stir to coat the greens with the bacon and liquid.
  5. Pour in the chicken broth and season with salt to taste. Stir everything together.
  6. Close and lock the lid of the pressure cooker. Select high pressure according to the manufacturers instructions and set the timer for 5 minutes.
  7. Allow 10 to 15 minutes for the pressure to build. Once the timer goes off, release the pressure using the natural release method for 20 minutes. After that, perform a quick release to remove the remaining steam, which should take about 5 minutes.
  8. Unlock the lid and carefully remove it. Taste the greens and add more salt if needed. Serve and enjoy!

Recipe Tips

  • If you like, you can add chopped onions. Cook them with the bacon or after the bacon until they become soft and translucent.
  • Feel free to experiment with other spices or seasonings in addition to salt, based on your taste preferences.

I would lean towards giving this dish 4 stars, mainly because there was no bitterness in the greens. I typically prepare this side dish using ham hock or neck bones, and I like to season it with Old Bay seasoning. Initially concerned about the lack of flavor, I decided to use all chicken broth instead of a mix with water. Overall, it's a solid and simple recipe that can easily be customized according to your preferences to give it an extra kick.

Super easy to prepare. Instead of water and chicken broth, I opted for a combination of chicken broth and homemade ham broth using ham base. I sprinkled in some soul food seasoning that I had bought, and it turned out fantastic! Both my husband and son absolutely adored them. I will definitely be making this recipe again!
