Easy Hoppin' John Recipe

Smoked Sausage and Black-Eyed Peas with Rice

Ingredients:

  • 1 pound smoked beef sausage, cut into bite-size pieces
  • 1 small onion, chopped
  • 3 (15 ounce) cans black-eyed peas, rinsed and drained
  • 2 (10.75 ounce) cans low sodium chicken stock
  • 1 cup water
  • teaspoon cayenne pepper (or to taste)
  • 2 cups uncooked instant rice

Directions:

  1. Place the sausage and onion into a large saucepan over medium heat. Cook and stir for about 10 minutes, or until the sausage starts to brown.
  2. Add the black-eyed peas, chicken stock, water, and cayenne pepper to the pan. Stir everything together and bring to a boil.
  3. Once the mixture is boiling, stir in the rice. Cover the saucepan and cook, stirring occasionally, for 20 to 25 minutes, or until the rice is tender and fully cooked.

Great recipe for New Year's Day! I made some adjustments for 6 servings, used Johnsonville turkey sausage, added 2 cans of peas, 1 can of drained diced tomatoes, and substituted cayenne with a dash of Cajun seasoning. I cooked the onion and garlic with 2 slices of bacon for flavor, but removed the bacon to keep it healthier.
