Barbequed Cabbage Recipe

Ingredients

  • head cabbage, cut into thick shreds
  • cup soy sauce
  • cup unsalted butter
  • Freshly ground black pepper to taste

Directions

  1. Preheat your outdoor grill to medium heat.
  2. Cut 4 squares of aluminum foil. Evenly divide the shredded cabbage among the squares.
  3. For each portion of cabbage, drizzle 2 tablespoons of soy sauce, then top with 1 tablespoon of butter.
  4. Season the cabbage with freshly ground black pepper to taste.
  5. Carefully fold the sides of the foil over the cabbage, sealing the packets securely.
  6. Place the foil packets on the preheated grill and cook for 15 to 20 minutes, or until the cabbage is tender.

I was unfamiliar with the concept of barbecuing cabbage, but it caught my attention. To make it healthier, I decided to skip the butter and soy and used olive oil instead. I coated the quartered cabbage with olive oil and seasoned it with salt, pepper, and granulated garlic. The result was fantastic! The edges of the cabbage had a delightful char while the inside remained tender and juicy without being mushy. Needless to say, this dish will be a staple for me all summer!

Rewritten review: Although the recipe called for cutting the cabbage into thick shreds, I decided to grill the wedges for a smoky, charred flavor and for a better presentation in photos before slicing them. I followed the recipe by grilling the cabbage wedges until lightly charred and then adding crumbled bacon on top. The dish turned out delicious. Thanks to ericasalad for this amazing recipe!

The dish turned out great! I realize I should have used a higher heat to achieve a better browning, but it was still delicious. I opted for olive oil instead of butter to reduce the calorie content, and it worked well.

If you enjoy cabbage as much as I do, you might find these appealing. However, I personally found them to be average at best. The taste was rather lacking, even after I added some onion to the mix. I initially checked them after 15 minutes on the grill and found the cabbage to still be quite firm, so I gave it an extra 10 minutes. Unfortunately, this resulted in the edges becoming charred and burnt. After trimming off the burned parts, I still ate it, but overall it simply tasted like plain cabbage. It was alright, I suppose, but the end result didn't justify the effort. I doubt I'll be making this recipe again.

I mostly stuck to the recipe and I have to say, this is hands down the best way I've come across to prepare cabbage. Everything just tastes better when it's barbecued.
