Campbell's Kitchen Beef Stroganoff
Ingredients:
- 1 pound boneless beef sirloin steak or beef top round steak
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 (10.75 ounce) can Campbell's Condensed Cream of Mushroom Soup or Campbell's Condensed 98% Fat Free Cream of Mushroom Soup
- teaspoon paprika
- cup sour cream or yogurt
- 4 cups hot cooked medium egg noodles
- Chopped fresh parsley (for garnish)
Directions:
- Slice the beef into very thin strips.
- In a skillet, heat half of the vegetable oil over medium-high heat. Add the beef and cook, stirring frequently, until browned. Once done, set the beef aside.
- In the same skillet, add the remaining oil. Add the chopped onion and cook over medium heat until it becomes tender.
- Once the onion is tender, pour off any excess fat from the skillet.
- Add the can of cream of mushroom soup and the paprika. Stir well and bring to a boil.
- Stir in the sour cream or yogurt, then return the cooked beef to the skillet. Heat through until everything is hot.
- Serve the beef mixture over the hot cooked egg noodles and garnish with chopped fresh parsley.
Tip: For easier slicing, freeze the beef for about 1 hour before cutting.

I prepared mine using two cans of Campbell's Golden Mushroom Soup and one can of their Beef Broth. I included some Worcestershire sauce and two small bottles of button mushrooms. Instead of yogurt, I used sour cream and served it over wide noodles. It was a hit with everyone!

I understand that this is a basic recipe. I enjoy experimenting with recipes and adding my own twist, such as sweet peas and carrots. I decided to use smaller-sized beef cubes which I marinated beforehand and then coated in flour before cooking in olive oil. I mixed everything together with drained noodles and my husband, my trusted taste-tester, loved it! Happy Father's Day! Next, I plan to make an apple pie-filling crisp/dump cake from my favorite recipe app. While preparing this recipe, I also marinated the apples in a mixture of cinnamon, nutmeg, and allspice.

A couple of suggestions: I used 2 cans of cream of mushroom soup, added 1 beef bouillon cube, and 1/4 cup of milk to make the dish even creamier and more flavorful. Definitely planning to make this again!

This recipe is versatile and can be made with either ground beef or ground turkey. I like to enhance the flavor with a dash of Worcestershire sauce and some dried basil, and if the mixture is too thick, I add a bit of beef broth. When sautéing the onion, I often throw in a cup of sliced fresh mushrooms if I have them on hand. It reminds me a lot of the SOS (Creamed Ground Beef) dish from my childhood. It pairs wonderfully with mashed potatoes or freshly baked fluffy biscuits.

Review rewritten: I transformed leftover Tri-tip by adding sliced fresh mushrooms and approximately 2 tablespoons of Worcestershire sauce, and substituting Cream of Mushroom Soup with Golden Mushroom soup. The result was delicious! This dish came together quickly and serves as a fantastic way to revamp leftovers. As no one in my family likes eating leftovers, I have to get creative and morph them into new dishes. This recipe successfully deceived everyone at the table - nobody suspected that leftover Tri-tip was used. I feel so clever! 😄

Good base recipe, but it needed more seasonings. I swapped the golden mushroom for garlic and sharp cheddar, and it turned out much better.
