Easy Sheet Pan Shrimp Fajitas Recipe

Ingredients

  • 1 cooking spray
  • 1 pound jumbo shrimp, peeled and deveined
  • 1 teaspoon lemon-pepper seasoning
  • 2 onions, cut into strips
  • 2 green bell peppers, cut into strips
  • 2 tablespoons olive oil
  • 1 (1 ounce) package fajita seasoning
  • 8 flour tortillas

Directions

Step 1: Preheat the oven to 350F (175C). Lightly spray a large sheet pan with cooking spray.

Step 2: In a bowl, mix the shrimp with lemon-pepper seasoning. Toss to coat the shrimp evenly.

Step 3: In a separate large bowl, toss the sliced onions and bell peppers with olive oil and fajita seasoning until they are well-coated.

Step 4: Arrange the seasoned shrimp on one side of the prepared sheet pan, and place the seasoned vegetables on the other side.

Step 5: Bake in the preheated oven for about 30 minutes, or until the shrimp turn bright pink and opaque, and the vegetables are tender.

Step 6: While the shrimp and vegetables bake, stack the tortillas on a microwave-safe plate and cover them with a damp paper towel. Heat in the microwave for 45 seconds or until warm.

Step 7: Serve the shrimp fajitas with warm tortillas. Enjoy!

Absolutely loved it and will definitely be making it again! I used red onion, peeled and deveined frozen shrimp, and frozen 3 pepper blend strips. While these ingredients may not be as fresh as I would have liked, the dish turned out quick and easy, perfect for a break from cooking. Here is the rewritten review: I enhanced the dish by adding thinly sliced red and yellow bell peppers, as well as sliced mushrooms. The recipe is fantastic. I created my own fajita seasoning instead of using a pre-packaged mix, and I waited to add the shrimp to the pan so that the veggies could cook to the perfect texture I wanted without overcooking the shrimp.
