Quick Meal-Prep Chicken Recipe

This recipe is designed to yield 6 servings and can be easily adjusted for more or fewer servings. The ingredients are listed for the original 1X yield, and cooking times and steps remain the same for any batch size. However, note that not all recipes scale perfectly, so keep that in mind.

Ingredients

  • 4 boneless, skinless chicken breasts (6 ounces each)

Directions

  1. Remove the broiler pan from your broiler and line it with foil.
  2. Preheat the broiler to its highest setting.
  3. Arrange the chicken breasts on the pan in a single layer, ensuring there is space between each breast for even cooking.
  4. Broil the chicken breasts for 3 to 4 minutes on each side, or until the center is no longer pink and the juices run clear when sliced. An instant-read thermometer inserted into the center should register at least 165F (74C).
  5. Once cooked, transfer the chicken to a plate and cover with foil. Let the chicken rest for about 5 minutes.
  6. After resting, cut the chicken as desired. You can slice it, chop it, or leave it whole based on your preference.
  7. Divide the chicken into individual servings and place them into freezer bags. Lay the bags flat in the freezer for optimal storage and even freezing.
  8. To speed up the freezing process, place ice packs on top of the bags. Once the chicken is fully frozen, remove the ice packs and store the chicken in the freezer as needed.

Cooks Note

If youre starting with individually frozen raw chicken breasts, be sure to thaw them before broiling. For quicker thawing, submerge the frozen chicken in hot water for about 30 minutes in a large pot.
