Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • cup clamshell mushrooms, or more to taste
  • Salt and freshly ground black pepper to taste
  • 2 (7 ounce) halibut fillets
  • 1 pinch cayenne pepper, or to taste
  • cup water
  • lemon, juiced
  • 1 tablespoons butter, room temperature but not soft
  • 1 tablespoon chopped flat-leaf Italian parsley

Directions

Follow these simple steps to prepare your dish:

  1. Step 1: Heat olive oil and 1 tablespoon butter in a heavy skillet over medium-high heat until the butter melts and begins to foam.
  2. Step 2: Add the mushrooms and a pinch of salt. Saut them in the hot butter and oil until they turn golden brown, about 5 minutes. Push the mushrooms to the edges of the pan to create space in the center.
  3. Step 3: Season both sides of the halibut fillets with salt and cayenne pepper. Place the fillets in the center of the skillet and cook until the fish flakes easily, about 3 to 4 minutes per side.
  4. Step 4: Transfer the cooked halibut fillets to a warm serving plate.
  5. Step 5: Pour water into the pan, scraping the browned bits from the bottom of the skillet with a wooden spoon. Bring the water to a boil and cook for 1 to 2 minutes, allowing it to reduce by half.
  6. Step 6: Add the lemon juice to the mushroom mixture and stir to combine.
  7. Step 7: Stir in the butter and parsley, continuing to stir until the butter melts and the sauce forms.
  8. Step 8: Remove the skillet from heat, season the sauce with salt and black pepper to taste.

Absolutely loved it! It was delicious the first night, so much so that I ended up making it two nights in a row. Lightly coating the halibut with flour on the second night resulted in a thicker and more flavorful sauce. This dish is perfect for serving to guests, but it's also simple enough to whip up just for myself... which I definitely plan on doing frequently!

This was the first Chef John recipe I tried, and I found it surprisingly simple to follow. I made a few alterations, substituting paprika for cayenne pepper and omitting parsley, but the dish still turned out great. I was pleasantly surprised by the flavor. One thing to watch out for is that the mushrooms release a lot of liquid while sautéing, which can affect cooking the fish. It may be helpful to sauté the mushrooms until all the liquid has evaporated before adding the fish.

I substituted freshly dehydrated mushrooms and used the liquid from rehydrating them in the sauce instead of water. I also added extra lemon juice. The dish was accompanied by mashed potatoes, asparagus, and a salad. It was a big hit!

This dish was a spontaneous decision after receiving partially thawed halibut through UPS. Luckily, I had some different types of mushrooms and lemon on hand, and the combination sounded interesting. It turned out to be a delightful surprise! My wife even commented that we've never had such an amazing fish dish, even when dining out.
