Quick and Easy Chicken Piquant Recipe
Chicken with Creole Seasoning and Pickles

Ingredients
- cup all-purpose flour
- teaspoon Creole seasoning (such as Tony Chachere's)
- 1 (16 ounce) package boneless, skinless chicken breast tenders
- 1 tablespoon olive oil
- 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL)
- cup diced sweet pickles
- 2 tablespoons red wine vinegar
- 2 tablespoons drained capers
- 2 garlic cloves, crushed
Directions
- In a shallow bowl, combine the flour and Creole seasoning. Mix well.
- Coat the chicken tenders in the flour mixture, ensuring each piece is evenly dredged. Shake off any excess flour.
- Heat the olive oil in a skillet over medium heat. Once the oil is hot, add the chicken tenders.
- Cook the chicken for about 2 minutes on each side, or until golden brown.
- Add the diced tomatoes with green chile peppers, pickles, vinegar, capers, and crushed garlic cloves to the skillet.
- Stir to combine, then cover and let the chicken simmer for about 10 minutes or until fully cooked. The chicken should no longer be pink in the center. Use an instant-read thermometer to check that the internal temperature reaches at least 165F (74C).
Tips
If you're concerned about the dish being too spicy, you can opt for a mild version of diced tomatoes with green chile peppers, such as a mild Rotel variety.

I tried out this recipe and it turned out amazing! I made a couple of tweaks - I used kosher dill pickles instead of sweet ones, and I threw in some chopped pickled jalapeno peppers because I had plain diced tomatoes on hand. I also whipped up my own creole seasoning to better manage the salt content. I will definitely be making this dish again.

This recipe was incredibly fast and simple to make, and the end result was delicious. Although I accidentally bought dill pickles instead of the intended ingredient, I diced them up, added a bit of sugar, and the dish turned out wonderfully. I will definitely make this again.

We are not fans of pickles, so I left them out and added extra capers instead. I swapped wine vinegar for red wine. The sauce was delicious over spaghetti noodles.

Tangy, savory, and flavorful! I have a soft spot for pickled foods, and the blend of vinegary ingredients with the chicken was spot on. I was tempted to deduct a star because I ended up with excess flour (which I find wasteful) and the seasoning in the flour seemed lacking. I swapped out sweet pickles for classic kosher dill and plan to increase the pickle quantity next time. To enhance the dish, I sautéed half an onion which was a nice addition. Overall, I relished this meal.

Delicious! I was out of capers so I used rice wine vinegar instead of red wine vinegar. Even with the substitution, this dish turned out to be easy to make and absolutely delicious. I will definitely be making it again!
