Pan-Seared Chicken Breasts with Shallots Recipe

Chicken with Shallot and White Wine Sauce

Ingredients

  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 4 skinless, boneless chicken breast halves, pounded thin
  • Salt and pepper to taste
  • 2 shallots, chopped
  • 1 clove garlic, minced
  • cup dry white wine
  • cup chicken broth

Directions

Step 1: In a large skillet, melt 1 tablespoon of butter and heat the olive oil over medium heat.

Step 2: Season the chicken breasts with salt and pepper, then brown on both sides in the skillet. Once browned, cover the skillet and cook the chicken for about 10 minutes, or until the juices run clear. Remove the chicken from the skillet and set aside to keep warm.

Step 3: In the same skillet, add the chopped shallots and minced garlic. Cook over medium heat, stirring occasionally, until the shallots become tender.

Step 4: Stir in the dry white wine, allowing it to heat through. Then, add the chicken broth and cook for an additional 5 minutes, or until the sauce has reduced and thickened slightly.

Step 5: Once the sauce has thickened, stir in the remaining 2 tablespoons of butter and allow it to melt completely. Taste and adjust seasoning with more salt or pepper if needed.

Step 6: To serve, place the cooked chicken on plates and spoon the shallot and wine sauce over the top. Serve immediately and enjoy!
