Tuna Curry in a Hurry Recipe

Ingredients

  • 2 tablespoons butter
  • 1 clove garlic, minced
  • cup chopped onion
  • cup chopped green bell pepper
  • 1 (5 ounce) can tuna, drained and flaked
  • 1 cup sour cream
  • 1 teaspoon curry powder
  • Salt and pepper to taste

Directions

  1. In a large saucepan over medium-low heat, melt the butter gently.
  2. Add the minced garlic, chopped onion, and green bell pepper. Cook slowly, stirring occasionally, until the onions turn soft and translucent.
  3. Stir in the flaked tuna, sour cream, curry powder, salt, and pepper. Mix thoroughly to combine.
  4. Heat the mixture until warmed through. Do not boil. Serve immediately while creamy and hot.

Editor's Note

The original tuna can was 6 ounces but has been reduced to 5 ounces by the manufacturer. You may need to slightly adjust the sour cream quantity for consistency.

Excellent Curry Recipe for Beginners! This recipe calls for 2 cans of tuna, 1 cup of sour cream, 1 can of spicy kimchi cabbage, pineapple chunks, along with butter, cumin, garlic, onion, and diced tomatoes. After cooking all the ingredients together until reduced, serve over Jasmine rice and top with chopped peanuts and raisins. Adding a chutney condiment would be the perfect finishing touch.

Rewritten review: This dish was absolutely fantastic!!! I followed HOLLMART's suggestion of making it a lighter version by substituting 1 tablespoon of olive oil for butter. Additionally, I took DANGEROUSPENGUIN's advice and increased the curry powder threefold, while also adding a teaspoon each of cumin and cayenne pepper. Served over basmati rice, it was simply amazing! Following ITSMEJEWELS1127's method of using half the sour cream, adding two and a half cups of water, half a bag of egg noodles, and simmering it down, resulted in the best Curry Tuna Helper I've ever tasted!!! Thank you to everyone for your great ideas!

I had a wonderful experience with this recipe. I made a few modifications by adding one stalk of celery, 1 1/4 red peppers (chopped, not green), approximately 7 chopped black olives. Additionally, I included 3/4 tsp of cumin, four generous shakes of cayenne pepper, along with onion and canned mushrooms. I sautéed everything in virgin coconut oil. I used three small cans of tuna as well. My husband absolutely adored it. - Jane

I loved making this super easy and budget-friendly meal for a weeknight dinner that my whole family loved. Following the advice of others, I increased the spice level by doubling the curry and adding garam masala. Don't forget to use all the sour cream if you're serving it over rice or noodles!
