Tamra's Microwave Tilapia Recipe

Original recipe (1X) yields 4 servings:

  • 1 pound tilapia fillets
  • 1 tablespoon butter
  • 1 garlic clove, minced
  • 1 teaspoon chopped fresh tarragon
  • cup apple cider vinegar

Directions

  1. In a microwavable baking dish, arrange tilapia fillets in a single layer.
  2. Dot the fillets with small pieces of butter and minced garlic.
  3. Sprinkle chopped fresh tarragon evenly over the fillets.
  4. Cover the dish with waxed paper and microwave on high for 2 minutes.
  5. Carefully turn the fillets over, recover, and continue microwaving on high for an additional 2 minutes.
  6. Remove the dish from the microwave and immediately sprinkle with apple cider vinegar.
  7. Serve and enjoy!

I prepared a large fish fillet for my kids, substituting Herbs de Provence for Tarragon. It only took 1 minute to cook the first side and a little over 30 seconds for the other side. Instead of white wine vinegar, I mixed apple juice with vinegar. The mild flavor was perfect for kids, and it was delicious!

I was pleasantly surprised to discover that you could actually microwave fish after trying out this recipe. It's a definite 5-star recipe for quick microwave cooking. The dish turned out perfectly delicious. I decided to go easy on the apple cider vinegar due to some negative reviews, but ended up adding more once I started eating – the flavors blended beautifully with each other. Next time I'll add the full amount right from the start. I used dried tarragon this time, but I'm curious to try it with fresh. This recipe is a keeper, and I'll definitely be making it again and again.

Tilapia is not a commonly eaten fish in our home, but this recipe turned out great when cooked in the microwave following the instructions. I substituted Herbs de Provence for the tarragon and used rice vinegar instead of apple cider vinegar, using only half the amount recommended.

This dish turned out a bit bland for me. The only modification I made was substituting dried tarragon for fresh. Sprinkling Penzey's 4S seasoned salt on top improved the flavor noticeably. It was certainly quick to make, and if you don't mind adjusting seasonings to taste, it's a decent and fast dish.

I was searching for a quick and simple way to cook tilapia, and this recipe seemed like a good fit. I used 1/2 teaspoon of dried tarragon instead of fresh. The fish ended up slightly overcooked, so perhaps reducing the cooking time by 3 minutes would have been better. While the recipe turned out fine, we weren't too fond of the flavor. The cider vinegar seemed to be too dominant, maybe skipping it altogether would improve the dish. Although it's easy to make, this particular recipe won't be a repeat in our house.

This recipe completely changed my opinion on tilapia! Usually, fish cooked in the microwave turns out tough and unappetizing, but to my amazement, my tilapia came out perfectly cooked in just 3 minutes - still tender, juicy, and flavorful. The first time I followed the recipe exactly, and since then, I've experimented with different spices each time I make it. Amazing! Quick, simple, and incredibly tasty! I sprinkled some Mrs. Dash Lemon and Garlic seasoning along with a pinch of sea salt, and it turned out fantastic. Pair it with rice for a perfect meal! This recipe is definitely going into my regular rotation!
