Easy Pineapple Chicken Recipe
Sweet and Savory Stir-Fry Chicken with Pineapple
This delicious stir-fry combines tender chicken, colorful vegetables, and juicy pineapple in a savory sauce thats sure to please your taste buds. Perfect for a quick and flavorful weeknight dinner!
Ingredients
- 3 tablespoons soy sauce
- 3 tablespoons olive oil, divided
- teaspoon paprika
- Salt, to taste
- 1 pound boneless, skinless chicken breast, cut into strips
- 1 red bell pepper, cubed
- 1 bunch scallions, trimmed and sliced into -inch lengths
- 1 (12-ounce) can pineapple chunks, drained (juice reserved)
- 1 tablespoon cornstarch
Directions
- Gather all ingredients to ensure everything is prepared for easy cooking.
- In a bowl, combine the soy sauce, 2 tablespoons of olive oil, paprika, and salt. Add the chicken strips to the marinade and mix well. Let the chicken marinate while you prepare the rest of the ingredients.
- Heat the remaining 1 tablespoon of olive oil in a wok or large skillet over medium-high heat.
- Add the cubed red bell pepper to the wok and stir-fry for 3 minutes until slightly softened.
- Next, add the sliced scallions and cook for an additional 2 minutes, stirring occasionally.
- Remove the chicken from the marinade and discard the marinade. Add the chicken to the wok and cook, stirring occasionally, for 10 to 15 minutes, or until the chicken is fully cooked and no longer pink in the center.
- While the chicken is cooking, mix the pineapple juice with cornstarch in a small bowl to form a smooth slurry.
- Once the chicken is cooked, add the pineapple chunks to the skillet and stir-fry for 2 to 3 minutes until heated through.
- Pour the pineapple juice and cornstarch mixture into the skillet, stirring well to combine. Bring the mixture to a boil and simmer for about 3 minutes, or until the sauce has thickened.
- Serve the stir-fry hot, garnished with additional scallions or herbs if desired. Enjoy!

Delicious! No wok - still turned out great. I browned the chicken in batches, then the peppers and added green onions when combined. I doubled everything so I would have leftovers. Served over white rice. Quick & easy - great for a weeknight dinner.

Super easy and would make again. I used fresh pineapple and wished I had more liquid. I added fresh ginger and garlic. I gave this 4 stars when it was fresh but after sitting in the fridge for a day it became 5 stars. Delicious!!!

This was delicious. I did add sugar snap peas and garlic as well. On the next batch I think I am going to saute chicken plain and make the sauce with pineapple , cornstarch and soy sauce to add at the end . Thank you for the recipe--keep them coming!

Recipe looks like a slant to Sweet & Sour, but also appears to be really plain, and sure enough that is what I see in the comments. If this is supposed to be Chinese, where's the ginger? Where's the Chinese 5 spice? Definitely needs a bit more in the flavor department.

Easy. Used teriyaki sauce instead of soy sauce and oil for the marinade based on comments of "bland". I added a handful of cashews just before serving for added crunch. Yum!

Quick and easy but it lacked flavour. If I were to make this again I would use fresh ginger instead of paprika, cook the chicken and remove to a warm plate and then cook the veggies. By the time that the red pepper and green onions had cooked for 15-20 minutes the onions were lost. A little sriracha would give this some zing. I served this over jasmine rice and a side of steamed broccoli.

My husband and I both moaned and groaned (in a good way) while we were eating this. It has fantastic flavor and texture. I did add some coconut and peanuts to it. Otherwise, it was made per original recipe. Oh. I simmered the chicken for about an hour before cooking it with the veggies. It was extremely tender and I added the broth to the end result because it was getting a little dry. But basically, it was the original version.

I created an account just to say how much I love this recipe. I did add some nice chunks of ginger to it. Using sesame oil instead of olive oil would be amazing too…..next time 😊

Overall a great recipe. I set it to 8 servings and began. Cooked my chicken in batches so it wouldn’t boil from all the liquid released during cooking it all. It even got my kido out of his room from the smell of it cooking. What went wrong was when I added the pineapple juice. During the brief cooking time with the chicken it managed to give it the boiled taste ??. My advice would be to cook the sauce separate then add it to the chicken mix. Then again it may not be an issue if not doubling the recipe. Thank you for sharing. Will make again.

Needs more oomph. And why discard the marinade? I added it to the skillet/wok with the chicken and it added a bit of flavor. Also I added mixed colored sliced Peppers and didn't have Scallions so I used yellow onion sliced. Easy enough, but needs Garlic and Ginger to make it a 5 star recipe.

Had to double with amount of chicken & substitute for paprika with chilli & coriander (also out of cayenne). Added pinches of ground clove & garlic before & after pine juice. Pine & sweet pepper always a hit!!!

Tried it for the first time day and is in love with you. I used a big nostick pan. Now, I did have to add more seasoning to my taste.
