didn't have any carrots so I used butternut squash and sweet vidila onions with potatoes. OMG, I almost didn't get any! And my wife; who hates squash; says I can make this any time...WINNER!

This recipe was easy and delicious! Some changes I made were I noted lemon zest as I had no lemon. I also subbed the oregano with rosemary. I included mushrooms and a few whole cloves of garlic. Here at altitude I baked for an hour.

This is a good basic roasting recipe. I appreciate that. I used 5 large carrots, cut smaller than 3 in because I didn't want to roast for 45 min. They roasted half hour, and I took the smaller ones out sooner. I used 1 T honey, 2 T oil, sprinkling of the other ingredients. Did potatoes on same pan, no honey. All good!

Love these. I'm not a fan of oregano, but always have a fresh rosemary plant in the kitchen window, so I add some fresh chopped rosemary leaves to the oil. Can also add quartered onions and unpeeled garlic cloves…for even better flavor.

I made his nearly as written, I doubled the recipe and used baby carrots to save time and did not measure my lemon zest, I used the zest of a full lemon (typically approx 1TB). Overall, everyone in my family ate this without complaints but no one was exclaiming these were the best potatoes ever. To my surprise, these were on the more bland side and could especially use more seasoning/salt and pepper.

I made this recipe to accompany a corned beef brisket for St. Patrick's Day. I didn't care for the traditional corned beef , soggy cabbage, carrots and potatoes cooked together in a slow cooker. Instead, I slow cooked the brisket and roasted these separately. Nirvana! The carrots and potatoes were so beautifully roasted in the honey EVOO oregano lemon medley...perfect together. Didn't miss the cabbage! Highly recommend.
