Slow-Cooker Ranch Short Ribs Recipe

This hearty dish brings tender beef short ribs to life with a rich sauce of red wine and Dijon mustard. Perfect for a comforting dinner, it serves beautifully over noodles, rice, or potatoes.

Ingredients

  • 4 pounds bone-in beef short ribs
  • 1 teaspoon ranch salad dressing & seasoning mix
  • 2 tablespoons olive oil
  • 2 onions, quartered
  • 1 cup red wine
  • 2 tablespoons Dijon mustard
  • Kosher salt and ground black pepper, to taste

Directions

  1. Step 1: Place the short ribs in a large resealable plastic bag. Add the ranch seasoning mix, seal the bag, and shake well until the ribs are evenly coated.
  2. Step 2: Heat the olive oil in a large Dutch oven or heavy pot over high heat until very hot, but not smoking. Add the ribs and sear them on all sides until nicely browned, about 10 to 12 minutes per batch. Work in batches if necessary. Transfer the browned ribs to a slow cooker.
  3. Step 3: Arrange the quartered onions around the ribs in the slow cooker.
  4. Step 4: In a small bowl, whisk together the red wine and Dijon mustard. Pour this mixture over the ribs and onions. Cover the slow cooker with its lid.
  5. Step 5: Cook on Low for 8 hours or on High for 4 hours, until the meat is tender and falling off the bone.
  6. Step 6: Before serving, skim off as much grease from the top as possible. Taste and season with salt and freshly ground black pepper as needed.

Cook's Note: These ribs are delicious served over buttered noodles, creamy mashed potatoes, or steamed rice.
