Fried Mashed Potato Cakes Recipe
Ingredients

- 1 cup leftover mashed potatoes, cooled
- 1 large egg
- 2 tablespoons all-purpose flour
- teaspoon salt
- 1 tablespoon vegetable oil, or as needed
Directions
Follow these simple steps to make crispy potato patties:
- Step 1: In a medium-sized bowl, mix together the cooled mashed potatoes, egg, flour, and salt until everything is well combined.
- Step 2: Heat a thin layer of vegetable oil in a frying pan over medium heat.
- Step 3: Working in batches, scoop about 1/6 of the potato mixture and drop it into the hot pan. Use a spatula to flatten the mixture into a patty.
- Step 4: Repeat the process, adding more patties to the pan, making sure not to overcrowd it.
- Step 5: Cook each patty for about 3 minutes per side, or until golden brown and crispy.
- Step 6: Once cooked, remove the patties from the pan and place them on a paper towel-lined plate to absorb any excess oil.

I substituted two tablespoons of King Arthur Gluten-Free Flour for regular flour in this recipe. I fried the pancakes in a mixture of coconut oil and bacon grease, and they turned out absolutely delicious! Gluten-free too!

I followed the recipe exactly, but substituted Cup4Cup gluten free flour. I let the bottom of each dollop brown slightly in the pan before flipping and smashing with a spatula to prevent sticking. After a few batches, I sprinkled on my homemade Everything seasoning, which really enhanced the flavor. These have now become our go-to breakfast side dish.

I prepare these mashed potatoes frequently. Occasionally, I take a shortcut and purchase already mashed potatoes from the grocery store, but only the real ones, not the instant kind. I always mix in some onions. In fact, I'm just about to whip up a batch now.

I had some leftover mashed potatoes from a package and decided to use them for this recipe. When I mixed everything together, I found the consistency to be a bit too loose, so I added an extra 1/2 tsp of flour. This adjustment worked perfectly, and the end result was absolutely delicious!
