  • 1 cup leftover mashed potatoes, cooled
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • teaspoon salt
  • 1 tablespoon vegetable oil, or as needed

Directions

Follow these simple steps to make crispy potato patties:

  1. Step 1: In a medium-sized bowl, mix together the cooled mashed potatoes, egg, flour, and salt until everything is well combined.
  2. Step 2: Heat a thin layer of vegetable oil in a frying pan over medium heat.
  3. Step 3: Working in batches, scoop about 1/6 of the potato mixture and drop it into the hot pan. Use a spatula to flatten the mixture into a patty.
  4. Step 4: Repeat the process, adding more patties to the pan, making sure not to overcrowd it.
  5. Step 5: Cook each patty for about 3 minutes per side, or until golden brown and crispy.
  6. Step 6: Once cooked, remove the patties from the pan and place them on a paper towel-lined plate to absorb any excess oil.

I substituted two tablespoons of King Arthur Gluten-Free Flour for regular flour in this recipe. I fried the pancakes in a mixture of coconut oil and bacon grease, and they turned out absolutely delicious! Gluten-free too!
