Ingredients

  • 2 teaspoons canola oil
  • 1 pound boneless skinless chicken thighs, cut into -inch pieces
  • 3 tablespoons cornstarch, divided
  • cup thinly sliced onion
  • 2 teaspoons minced fresh ginger
  • 4 garlic cloves, thinly sliced
  • 5 cups broccoli florets
  • cup water
  • cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon light brown sugar
  • teaspoon crushed red pepper flakes (or to taste)
  • teaspoon freshly ground black pepper

Instructions

Step 1: Start by gathering all your ingredients. Make sure everything is prepped and ready for cooking.

Step 2: Heat the oil in a large non-stick skillet over medium-high heat for about 2 minutes. The oil should be shimmering when it's ready.

Step 3: Meanwhile, coat the chicken pieces with 1 tablespoon of cornstarch in a medium bowl, ensuring the chicken is evenly coated.

Step 4: Add the chicken to the skillet in a single layer. Cook, stirring frequently, until the chicken becomes crispy and is fully cooked through, which should take about 6 minutes.

Step 5: Add the sliced onions to the skillet and cook, stirring often, for about 1 minute, until the onions are translucent.

Step 6: Add the minced ginger and sliced garlic to the pan. Stir constantly for about 1 minute, until fragrant.

Step 7: Transfer the chicken mixture to a plate and set aside for later.

Step 8: In the same skillet, add the broccoli florets. Cook, stirring occasionally, for 2-3 minutes until the broccoli is bright green and heated through.

Step 9: While the broccoli is cooking, whisk together the water, soy sauce, oyster sauce, brown sugar, crushed red pepper, black pepper, and the remaining 2 tablespoons of cornstarch in a small bowl until smooth.

Step 10: Add the cooked chicken mixture back into the skillet with the broccoli. Pour the soy sauce mixture over the top. Stir well and cook for another 2 minutes, until the sauce thickens and the chicken and broccoli are well-coated.

Step 11: Serve immediately and enjoy your delicious chicken and broccoli stir-fry!

Test Kitchen Tips

  • When cooking the broccoli, avoid overcooking it by stirring occasionally. Stir-frying the broccoli in the pan will help retain its crispness.
  • This dish is perfect for a weeknight meal. Start cooking rice at the same time, and by the time the rice is done, your stir-fry will be ready to serve.
  • Let the chicken cook undisturbed for the best results. This helps to develop a nice crispy crust and builds layers of flavor.

How to Store Chicken and Broccoli Stir-Fry

Store any leftovers in an airtight in the refrigerator for up to one day. We recommend not storing it for more than a day, as the broccoli may become soggy.

Absolutely amazing!! I don't usually leave reviews, but this recipe is a game-changer. I included carrots and reduced the water to 1/2 cup for a richer sauce. Will for sure be making this again!!

This recipe is excellent! I followed others' advice and added approximately 2 teaspoons of rice vinegar to the sauce, which enhanced the flavors. I also found that the suggested amount of cornstarch was too much. Instead, I made a slurry with equal parts cornstarch and water and gradually added it to the sauce in the pan until it reached the perfect consistency. The flavors were delightful!

Review Rewritten: "I absolutely loved this recipe! I reside in Singapore and have a passion for cooking Asian cuisine. I prefer using fresh spices from my own garden, so I only used half of the recommended amount to avoid overpowering the dish. It's important to note that this recipe definitely takes longer than 15 minutes to prepare, so plan for at least an hour if you're starting from scratch with fresh ingredients, especially when it comes to spices. Marinating the chicken beforehand is key for achieving tender meat. Be sure to follow the instructions closely. Don't precook the fresh broccoli! Instead, add it to the marinated chicken towards the end and cook until tender while stirring constantly. The flavors are excellent and I plan to include this dish in our Christmas dinner alongside Crispy Duck from Singapore. While I usually make Kung Pao, I believe this recipe offers a milder yet equally satisfying option. Thanks for sharing!"

Wow, this dish was incredibly tasty! The recipe was easy to follow. I decided to use 3lbs of chicken and adjusted the ingredients accordingly. The only variation I made was seasoning the diced meat with my favorite seasoning salt and pepper before marinating it overnight. Today, I cooked it up and served it over a bed of rice. It was a delicious meal, and I wouldn't make any other changes next time.

We thoroughly enjoyed it! Unfortunately, I didn't have corn starch on hand, so I had to omit it, which resulted in a slightly thinner sauce. The dish turned out fantastic even without ginger. I used chicken breasts and also added green onions, carrot, cauliflower, a splash of Sriracha instead of chili peppers, and topped it off with diced cashews and almonds. Absolutely delicious!
