  • 1 (12 ounce) package dry spaghetti
  • 2 large eggs, at room temperature
  • 2 egg yolks, at room temperature
  • 1 teaspoons Hidden Valley Original Ranch Salad Dressing & Seasoning Mix
  • Coarsely ground black pepper, to taste
  • cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • 4 ounces diced bacon
  • Freshly grated Parmesan cheese, for serving

Directions

Step 1: Fill a large pot with salted water and bring it to a rolling boil. Add the spaghetti and cook until al dente, about 10-12 minutes. Drain the pasta, reserving 1 cup of the cooking water.

Step 2: While the pasta cooks, whisk together the eggs, egg yolks, Hidden Valley Original Ranch Salad Dressing & Seasoning Mix, a pinch of black pepper, and Parmesan cheese in a bowl. Set aside.

Step 3: Heat the olive oil in a large skillet over medium heat. Add the diced bacon and saut for 5-7 minutes, until it starts to crisp and release its aroma.

Step 4: Reduce the heat to low and add the drained spaghetti to the skillet with the bacon. Toss to coat the pasta evenly with the bacon and oil.

Step 5: Transfer the pasta and bacon mixture to a large mixing bowl. Pour in the egg and cheese mixture, adding a small amount of the reserved pasta water to achieve a creamy texture. Toss everything together until the sauce evenly coats the spaghetti.

Step 6: Serve immediately, garnishing with extra freshly grated Parmesan cheese for a rich, savory finish.

Cook's Note: For a slightly different flavor, you can substitute pancetta for bacon.
