Popcorn Chicken Recipe

Original recipe (1X) yields 6 servings:

  • 3 cups flour
  • 2 teaspoons garlic powder
  • teaspoon salt
  • teaspoon ground black pepper
  • 2 eggs
  • 2 tablespoons lemon juice
  • 2 cups oil, or as needed
  • 3 skinless, boneless chicken breasts, cubed

Directions

  1. In a bowl, mix together the flour, garlic powder, salt, and black pepper.
  2. In a separate bowl, beat the eggs and lemon juice together until well combined.
  3. Heat 2 inches of oil in a large pot over medium heat.
  4. Take each piece of chicken and dredge it in the flour mixture, shaking off the excess.
  5. Dip the coated chicken into the beaten egg mixture, letting the excess egg drip back into the bowl.
  6. Press the chicken back into the flour mixture to coat it thoroughly.
  7. Carefully lower the chicken pieces into the hot oil, working in batches. Fry the chicken until golden brown, about 7 to 8 minutes.
  8. Once golden brown, transfer the chicken pieces to a paper towel-lined plate to drain excess oil.
  9. Repeat the process with the remaining chicken pieces.

Recipe Tip

To test if the oil is hot enough, drop in a small amount of flour. If it sizzles, the oil is ready for frying.

This dish came out wonderful! I believe that the flour could benefit from doubling the amount of seasoning, but aside from that, I wouldn't make any other changes.

This recipe turned out absolutely perfect after I took the advice of other commenters and increased the seasonings to 3 tablespoons of salt, 1 tablespoon of pepper, and 2 tablespoons of garlic powder. Honestly, I found the original recipe to be quite bland and lacking in flavor. It seemed to be missing the kick of salt and pepper. I decided to tweak the recipe by incorporating additional salt, black pepper, cayenne pepper, red chili powder, and extra garlic powder to the flour. I also squeezed in some extra lemon juice into the egg mixture. The second batch turned out significantly tastier after these modifications.
