Chorizo and Sweet Potato Dumplings with Peach Thai Chili Sauce Recipe

Original recipe (1X) yields 10 servings
- 2 sweet potatoes, peeled
- 1 pound chorizo sausage
- cup grated Cheddar cheese (Optional)
- 2 tablespoons chopped fresh cilantro
- 1 (16 ounce) package wonton wrappers
Sauce
- 1 cup peach jam
- 1 cup sweet Thai chili sauce
- 2 teaspoons vegetable oil, or as needed
Directions
Step 1: Place sweet potatoes into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low and simmer until tender, about 20 minutes.
Step 2: Meanwhile, heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, about 5 to 7 minutes. Let cool.
Step 3: Drain the sweet potatoes and mash them. Let them cool for 10 to 15 minutes, or until safe to handle.
Step 4: Combine the mashed sweet potatoes, chorizo, Cheddar cheese (if using), and cilantro to make the dumpling filling.
Step 5: Set up your dumpling prep area. Place a tray nearby for cooling the dumplings and a bowl of water to seal them. Take a wonton wrapper and place 2 teaspoons of the filling in the center.
Step 6: Wet the outer edges of the wrapper with water, fold it over, and press to seal. Place the finished dumpling onto the tray.
Step 7: Repeat with the remaining filling and wrappers until all dumplings are assembled.
Step 8: Refrigerate the dumplings for 30 minutes. Afterward, seal them in a zip-top bag and freeze until ready to cook.
Step 9: To make the dipping sauce, combine peach jam, Thai chili sauce, and cilantro in a small bowl. Stir to combine.
Step 10: To cook the frozen dumplings, heat oil in a pan over medium-high heat. Add the dumplings, along with a little water. Pan-fry for 10 to 12 minutes, until heated through and crispy on the outside.
Cook's Note
Feel free to use any cheese you prefer in place of Cheddar.
