Creamy Vegetarian Tortellini Soup Recipe
Ingredients

- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, divided
- teaspoon Italian seasoning
- teaspoon granulated garlic
- teaspoon onion powder
- teaspoon salt
- 1 teaspoon freshly ground black pepper
- 2 cups vegetable broth
- 1 zucchini, quartered and sliced
- 1 (9 ounce) package cheese tortellini
- cup heavy whipping cream
- cup freshly grated Parmesan cheese
Directions
Step 1: Heat olive oil in a saucepan over medium heat until it shimmers. Add chopped onions and cook for about 5 minutes until they are soft and translucent.
Step 2: Add minced garlic and cook for another 45 seconds, or until fragrant.
Step 3: Add half of the diced tomatoes with their liquid to the pan. Season with Italian seasoning, granulated garlic, onion powder, salt, and freshly ground black pepper. Stir everything together to combine.
Step 4: Pour the remaining diced tomatoes into a separate bowl and use an immersion blender to puree them until smooth. Add the pureed tomatoes to the saucepan along with the vegetable broth.
Step 5: Stir in the sliced zucchini and cheese tortellini. Cover the saucepan and cook for 8 to 10 minutes, or until the tortellini float to the top and are fully cooked.
Step 6: Stir in the heavy whipping cream and freshly grated Parmesan cheese. Mix everything until well combined. Taste the soup and adjust the seasoning if necessary.
Step 7: Serve immediately and enjoy!
Cook's Note:
If you'd like to add some meat to the soup, you can include 8 ounces of cooked Italian sausage for extra flavor.
