Beer Lime Grilled Chicken Recipe

Grilled Chicken with Lime and Beer Marinade

Original recipe yields 4 servings

Ingredients

  • 1 lime, juiced
  • 1 (12 fluid ounce) can light colored beer
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste
  • 4 skinless, boneless chicken breast halves

Directions

  1. In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey is dissolved.
  2. Pour the mixture over the chicken, cover, and marinate for 30 minutes.
  3. Preheat an outdoor grill to medium heat and lightly oil the grate.
  4. Remove the chicken from the marinade, shaking off any excess, and discard the remaining marinade.
  5. Grill the chicken for about 7 minutes on each side or until it is tender and the juices run clear.

I wanted to prepare some low-fat shredded chicken and opted to marinate boneless, skinless chicken breasts with this product. To keep the dish light, I utilized Miller 64 and let the chicken marinate for around 3 hours. The chicken turned out incredibly moist and shredded easily. While it wasn't overly intense in flavor, making it less suitable as the main attraction of a meal, I will definitely prepare it again. I might try experimenting with different types of beer and serving it with delicious side dishes. (For my meal, I shredded the chicken and used it to make chicken tacos along with a small can of chopped green chilies, 2/3 cup of water, and a packet of taco seasoning. I was really pleased with the outcome.)

I made this recipe with a slight variation in the marinade. For an extra burst of flavor, I recommend freezing a couple of limes ahead of time. When it's time to prepare the marinade, grate the frozen lime zest into it instead of just squeezing the juice from the halved limes. This method enhances the lime flavor and preserves all the nutrients from the peel. I marinated the chicken for approximately 4 hours, but you can also prepare the marinade in advance (even the night before) and store it in a sealed container in the fridge. Overall, a simple yet effective way to elevate the taste of your dish!

I diced the chicken and marinated it for around 8 hours. I also included some extra honey and garlic. Absolutely delicious! I will certainly be making this dish again.

This dish was excellent and incredibly simple to make. I opted to use 2 large chicken breasts, each cut in half, to create 4 satisfying portions. I followed the recipe's directions for the marinade mix and let the chicken marinate for several hours, or overnight when feasible, before grilling. The flavor was outstanding, and the beer helped to keep the meat tender and juicy.

This recipe could benefit from a bit more salt and pepper to enhance the flavors. Without it, the other ingredients get overshadowed.
