Pan-Fried Cube Steaks with Simple Pan Sauce Recipe

Cook Time: 10 minutes

Ingredients:

  • 24 ounces cube steak, cut into 4 portions
  • 3 tablespoons unsalted butter, divided
  • Salt and freshly ground black pepper to taste
  • cup Worcestershire sauce, divided
  • cup water

Directions:

  1. Lightly season both sides of each cube steak with salt and pepper.
  2. Melt 1 tablespoon of unsalted butter in a large, non-stick skillet over medium heat. Once the butter is foamy, add the cube steaks to the skillet.
  3. Sprinkle about 2 teaspoons of Worcestershire sauce over each cube steak and cook until browned, about 3-4 minutes.
  4. Flip the steaks and sprinkle each with an additional 1-2 teaspoons of Worcestershire sauce. Cook for another 3 minutes, or until the steaks are firm and reddish-pink in the center. The internal temperature should reach 135F (57C) when checked with an instant-read thermometer.
  5. Transfer the cooked steaks to a platter and tent with foil to keep warm.
  6. To make the pan sauce, pour cup of water into the skillet and stir to loosen the browned bits from the bottom of the pan.
  7. Bring the water to a boil and cook for about 2 minutes, scraping up the bits and allowing the sauce to thicken slightly.
  8. Remove the skillet from heat and stir in the remaining butter until fully melted.
  9. Pour the pan sauce evenly over each cube steak and serve warm.

Cook's Note:

I used four 6-ounce cube steaks for this recipe. Worcestershire sauce is quite salty, so be mindful of the amount of salt you add to the steaks.

I haven't had cube steak in decades! I remember my mother making it. This was very good and surprisingly tender. I used salt (very lightly), pepper and salt-free seasoning . I only did one patty so scaled it down. I added a minced clove of garlic to the sauce. Cooking time is spot-on. This is a good, inexpensive way to satisfy a craving for meat! Very quick. I live alone so I only use two cutlets. The only changes I made was deglazing my pan in 1Tbsp red wine and added 2tsp demi glace base in my water and added I TBSP butter after turning off the heat. Just perfect 👌 I serve with some microwave Green Giant baby red potatoes, snap peas onion and red pepper mix. Done in 15 min.

Excellent, should have read the note about salt. Ended up a little too salty for the wife but I like it salty. Added one medium minced shallot and three or four cloves minced garlic to the pan sauce. Served with steamed broccoli and boiled sunburst potatoes. Will definitely make again.

Pretty bland and one note flavor. Meat was tender, but I would not make this again. I even added fresh garlic to the pan sauce, and used umami anchovy salt (like fish sauce but in granulated form), but it still wasn’t that great. I ate it, so it was edible, but was pretty disappointed.

Cubed steak is not one of my favorites, but it's what was in the freezer that would thaw quickly. I didn't have any Worcestershire sauce (my bottle fell out of the fridge and broke just a few days ago🙄) so I used Dale's seasoning 🤷. I cut the recipe in half, as I was only preparing 2 steaks. It turned out pretty good, a bit bland but nothing a little bit of A1 sauce couldn't fix. Served with roasted potatoes and green beans. My 7 year old loved it. Look forward to trying with Worcestershire sauce next time . Thanks for sharing!

I'm not sure how anyone can cook a cubed steak to death, and this recipe is no different. Any recipe encouraging cooking for 4 mins on one side and 3-4 mins on the other will result in DRY, overcooked cubed steaks, esp if it encourages pounding them, further, to a thickness of 1/4+ inches. I barely cooked my cubed steaks and they were dry beyond all recognition. I'll follow my instincts next time. Thanks.

When you need to food fast no matter if its for family and or friends. For one or a couple in fact it won't break the bank even the needs calls for greater than a few. Fast, Flavorful, Filling. Finally my family agrees its one of our favorites. :) thanks for sharing

Quick and easy, and full of flavor. I served it with Basmati rice and whole kernel corn. It is also a money saving meal when you find a good deal on cube steak.
