Stuffed Tomatoes with Smoked Sausage
This simple and delicious dish combines ripe tomatoes, flavorful smoked sausage, and melty cheddar cheese. Perfect for a quick lunch or dinner, its easy to make and sure to please!
Ingredients
- 2 large ripe tomatoes
- 1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
- cup dry bread crumbs
- cup shredded Cheddar cheese, divided
- pound smoked sausage, cut into 1-inch pieces
Directions
- Gather all the ingredients and preheat your oven to 400F (200C).
- Slice the tops off the tomatoes and carefully cut around the inside to separate the flesh from the skin. Scoop out the flesh and discard or set aside for another use.
- Place the hollowed-out tomatoes into a small baking dish, ensuring they are steady and can stand upright.
- In a separate small bowl, combine the diced tomatoes with green chile peppers, bread crumbs, and cup of shredded Cheddar cheese. Stir in the smoked sausage pieces and mix well until everything is evenly distributed.
- Spoon the prepared mixture into the hollowed tomato skins, filling them generously.
- Top the stuffed tomatoes with the remaining cup of shredded Cheddar cheese.
- Place the baking dish in the preheated oven and bake for about 15 minutes, or until the tomatoes are warmed through and the cheese has melted and is slightly golden.
- Remove from the oven and serve immediately while hot. Enjoy!

This is a wonderful, easy stuffed tomato recipe. I am surprised there isn't that many reviews. I used 4 medium tomatoes instead of 2 large. I had to use Italian sausage because that's all I had, I crumbled and browned before using in the stuffing. I was skeptical about using the cheddar with that, but I was so wrong. The flavor combo is great. I did grease the bottom of my dish with a bit of olive oil before placing the tomatoes. I will definitely make these again. A light sprinkle of basil on top the cheese also adds good flavor. My boyfriend who isn't fond of tomatoes had two. Thanks for sharing the recipe :)

Truth be told, I think this is a five star recipe. My hubs is just not too crazy about stuffed tomatoes, so....4 *. Our end of season glean was too small to preserve and needed to be eaten. This recipe did the trick. I did use the scooped out tomatoes (chopped up) and a half can of chopped green chilis instead of the Rotel, but that was because I couldn't see wasting that beautiful fruit. Yummy!

These stuffed tomatoes are delicious. I used andouille sausage and instead of the canned tomatoes, I used the scooped out pulp. I drained the pulp of excess liquid. I cooked at 400 for about 20 minutes and then turned the oven to 350 and cooked for another 10 minutes. This is definitely a " do again".

Did not use canned tomatoes. I reserved the gut of the tomatoes and browned two banana peppers with the sausage. I stuffed leftover vegetables from the garden then topped with parsley.

This recipe executed well, my only problem is that the tomato is quite bland unless seasoned with some salt and pepper. So make sure you season the inside of the tomato before stuffing it.

I really liked this one. I used ground mild Italian sausage and browned it first. I also used Italian seasoned bread crumbs and diced some of my own garden tomatoes in addition to the canned since I was tripling the recipe. This is great stuffed in green peppers as well but you will need to bake it longer for the peppers to soften.

We loved this recipe! I used ground sausage, browned in a frying pan to make sure it would be done all the way through before adding it to the mixture. Turned out great. Will try to add something like precooked wild rice next time to give a little more depth, but overall was a great alternative to stuffed bell peppers, which was exactly what I was looking for!

Used the cut out parts of the tomatoes instead of canned - phenomenal!! This was extremely filling and cheap to do! Love it.

I was looking for a recipe to use up the giant tomatoes we had and this worked really well. I changed the recipe and did chicken instead of sausage. I also added spinach and balsalmic vinegar. Used italian bread crumbs. Very good. I also just cut up the insides of the tomatoes instead of opening a can. Seemed like such a waste just to throw the insides away when they are perfectly usable. Just rinse them off so they are not too juicy.

This recipe is a keeper! I used smoked turkey sausage to make it a little healthier. Also, I didn't have any can tomatoes so I used insides of the tomatoes. I just put them in a pot, added my favorite spices, simmered for about 30 minutes or less. Drained some juice and it worked out great! Thanks for this recipe. Kids and husband loved it.

I was looking to use up some excess Roma tomatoes. I halved them, filled them, and served them as a side dish. We always call the tomato innards, Tomato Jelly . Wonderful!

Made the mistake of using a too spicy canned diced tomatoes---but they were still very good and easy to make. Next time I'll use a really mild flavored brand.

I used ground beef onions whole grain rice and some spices ... I also just used the inside of the tomato diced up and did not use the canned tomatoes ... I used a jabenero and Monterey Jack mixture on top with a side of garlic bread

Made vegetarian ones but baked them in a muffin pan rather than a baking sheet. They turned out well!
