Firehouse Haluski Recipe
Ingredients
- 1 (12 ounce) package kluski noodles
- 2 heads cabbage, cored and cut into bite-size pieces
- 1 onion, chopped
- cup water
- 1 pound kielbasa sausage, diced
- cup vegetable oil
- 1 tablespoon mustard seeds
- Salt and ground black pepper to taste
- 4 eggs, beaten
Directions
Step 1: Bring a large pot of lightly salted water to a boil. Cook kluski noodles for about 8 minutes, or until tender. Drain the noodles, chop them into small pieces, and set them aside.
Step 2: In a large pot, cook cabbage and onion, covered, with water over medium heat for 8 to 10 minutes, or until the vegetables are tender.
Step 3: Heat vegetable oil in a large skillet over medium heat. Transfer the cabbage and onion into the skillet with a slotted spoon. Cook the mixture in the hot oil until the vegetables begin to brown, about 10 minutes.
Step 4: Stir in the diced kielbasa sausage and continue to cook until the sausage is heated through.
Step 5: Add mustard seeds to the cabbage and sausage mixture. Season to taste with salt and black pepper.
Step 6: Stir in the chopped kluski noodles, combining them well with the other ingredients.
Step 7: Pour the beaten eggs over the noodle mixture. Stir gently until the eggs are set, about 3 to 5 minutes.

Our family adores this recipe! The first time I made it, I followed the instructions to a tee and it turned out fantastic. The next time around, I had to improvise because I didn't have kielbasa. I decided to swap it out with some ground beef (just under a pound) and a few bacon strips. I simplified the process by using an instant pot. I started by sautéing the beef and bacon, then cooked the onions in the leftover drippings without any extra oil. Next, I added the cabbage and mustard seed, cooking until the cabbage wilted. I then poured in 2 cups of chicken stock and 16 ounces of egg noodles, sealed the instant pot, and cooked at pressure for 9 minutes before quick releasing. After adding eggs and thawed frozen peas, I let it settle to allow the eggs to set and peas to cook. To finish, I mixed in a generous spoonful of sweet Bavarian mustard, salt, and pepper to taste. Surprisingly, my son, who is usually quite picky, preferred this version! It's a versatile recipe that you can adapt based on what ingredients you have on hand.

Rewritten review: This recipe is fantastic! I enjoy cabbage, but my husband isn't a big fan. However, he's going for seconds as I type this. I customized it by adding some extras like ham base, garlic powder, Italian seasonings, and red pepper to the cabbage. I also threw in carrots and grape tomatoes from my fridge. Thank you for the excellent base recipe! I used regular egg noodles and adjusted the cabbage and kielbasa quantities slightly. This dish has become a new favorite in our dinner rotation!
