Vegan Spanish Rice Recipe

Recipe: Spicy Rice with Vegetables

Ingredients

  • 2 tablespoons olive oil
  • 1 cup uncooked brown rice
  • red bell pepper, chopped
  • 1 onion, chopped
  • 2 teaspoons crushed garlic
  • 2 cups water
  • 1 (10 ounce) can diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon salt

Directions

Step 1: Heat the olive oil in a deep skillet over medium heat.

Step 2: Add the brown rice, red bell pepper, onion, and crushed garlic to the skillet. Cook and stir the mixture until the rice is browned and the onion becomes tender, which should take about 5 minutes.

Step 3: Stir in the water and the canned diced tomatoes. Season the mixture with chili powder and salt to taste.

Step 4: Cover the skillet and allow the rice to simmer for approximately 30 minutes, or until the rice is fully cooked and the liquid is absorbed.

This dish was surprisingly delicious. I usually don't enjoy brown rice, but it complemented the recipe nicely. I made a small alteration to the cooking process, as per my husband's preference. He likes bell peppers to retain some crunch, so I added them in the last 10 minutes of cooking, and it worked out perfectly for him.
