One-Pan Sriracha Chicken and Veggies Recipe

Cook Time: 45 minutes

Ingredients:

  • 4 skin-on chicken thighs
  • Salt and ground black pepper to taste
  • cup butter, divided
  • red onion, sliced
  • 8 cloves garlic, minced
  • 4 baby red potatoes, quartered
  • 1 red bell pepper, diced
  • cup Sriracha sauce
  • cup brown sugar

Directions:

  1. Preheat the oven to 400F (200C).
  2. Season the chicken thighs with salt and black pepper.
  3. In a large oven-proof skillet, melt 3 tablespoons of butter over medium-high heat.
  4. Place the chicken thighs in the skillet, skin-sides down. Cook for about 3 minutes, or until browned.
  5. Flip the chicken thighs and cook the other side for another 3 to 4 minutes, until browned.
  6. Transfer the thighs to a plate and set aside. If you prefer, drain any excess grease from the skillet.
  7. In the same skillet, melt the remaining 1 tablespoon of butter over medium heat.
  8. Add the sliced onion and minced garlic, stirring until fragrant, about 2 minutes.
  9. Stir in the quartered potatoes and diced bell pepper. Cook for 5 to 10 minutes, until the vegetables are tender.
  10. Place the browned chicken thighs on top of the vegetables in the skillet.
  11. In a small bowl, mix the Sriracha sauce and brown sugar. Pour the mixture over the chicken thighs.
  12. Transfer the skillet to the preheated oven and bake for about 30 minutes, or until the internal temperature of the chicken reaches 165F (74C) and the potatoes are browned.

Absolutely adored this dish! I swapped brown sugar for honey and included an extra dose of vegetables like bok choy, broccoli, zucchini, carrots, and green peppers. I made sure to add the veggies that cook faster just before popping it into the oven. This will definitely be a regular feature on our menu moving forward.

I really enjoyed the sauce, but it was a bit too spicy for my taste, and I usually enjoy spicy food. I decided to add cauliflower to the dish, and it turned out to be a fantastic addition. However, the potatoes felt out of place in this dish, so next time I'll skip them and add more veggies like carrots, cauliflower, and broccoli, which I think would complement the meal better. I also felt that the dish needed another starch element aside from the sauce. I'll have to experiment with adjusting the spiciness level for future attempts.
