Lemon-Parmesan Chicken and Rice Bowl Recipe

Lemon-Parmesan Chicken and Rice Bowl Recipe

Cook Time: 30 minutes

This flavorful chicken and rice dish combines tender chicken, vibrant broccoli, and a hint of lemon, all topped with a sprinkle of Parmesan cheese. Perfect for a cozy weeknight dinner!

Ingredients

  • 1 cup rice
  • 5 tablespoons vegetable oil, divided
  • 2 cups hot water
  • 1 (8 ounce) package frozen broccoli
  • Salt and ground black pepper to taste
  • 2 pounds skinless, boneless chicken breast, cut into 1-inch cubes
  • 1 teaspoons garlic powder
  • 1 teaspoons onion powder
  • 1 large onion, diced
  • 1 lemon, zested and juiced
  • cup grated Parmesan cheese

Directions

  1. Preheat the oven: Set your oven to 400F (200C). This will ensure it's ready for baking the rice.
  2. Prepare the rice: In an oven-safe pot, heat 2 tablespoons of vegetable oil over medium-high heat. Add the rice and stir it to coat evenly with the oil. Pour in the hot water, bring it to a boil, then cover the pot and place it in the oven. Bake for 12 to 15 minutes until the water is absorbed and the rice is tender.
  3. Cook the broccoli: While the rice bakes, bring a large pot of salted water to a boil. Add the broccoli and simmer for 5 to 7 minutes, or until tender. Drain the broccoli and season with salt and pepper.
  4. Cook the chicken: In a skillet, heat the remaining 3 tablespoons of oil over medium-high heat. Add the chicken and season with garlic powder and onion powder. Cook the chicken for 5 to 7 minutes until its browned and cooked through.
  5. Add the onions: Stir in the diced onion with the chicken and cook for another 5 to 7 minutes until the onions are soft and translucent.
  6. Combine rice and chicken: Add the cooked rice to the skillet with the chicken and onion mixture. Let it cook for about 3 minutes, allowing the rice to brown lightly on the bottom.
  7. Finish the dish: Stir in the cooked broccoli, lemon zest, and lemon juice. Mix everything together well. Top with grated Parmesan cheese and serve immediately.

Lovely dish! Unfortunately, I didn't have a covered pot to use in the oven, so I cooked the rice on the stovetop using basmati. This recipe serves as a great foundation that allows for customization with various vegetables and seasonings. It's a satisfying and light meal option.

Delicious! Making a few key changes would elevate it to 5 stars. I cooked everything on the stovetop, increased the amount of lemon by doubling it, seasoned the chicken as directed, and then seasoned the entire dish again after mixing the broccoli, rice, and chicken together with the same seasonings of onion powder, garlic powder, salt, and pepper.

Rewritten review: Like many other reviewers, I opted to cook the rice on the stovetop instead of in the oven. I also chose to roast the broccoli as I prefer it that way. Using fresh garlic instead of garlic powder and skipping the onion powder worked well for me to avoid an overpowering onion flavor. Seasoning the chicken with basil, thyme, and oregano complemented the lemon and parmesan nicely. The dish turned out delicious - the lemon juice and zest added a great flavor dimension, and the broccoli was a tasty addition. This recipe is perfect for a straightforward chicken and rice meal, and as mentioned by others, it's easy to tailor to personal preferences.

My family absolutely adored this dish! I sautéed the onions separately to enhance their flavor and included sweet baby peppers and ginger strips. The result was incredibly delicious! I decided to serve the rice on the side instead of mixing it in, giving it a fried rice vibe. Thank you for sharing this recipe! :)

This dish lacked flavor and none of us were able to finish it. It definitely needed a boost in all the spices.

This meal has the potential to be delicious, but we found it lacked flavor. I would suggest adding fresh garlic and perhaps fresh mushrooms to enhance the taste. It needs a little kick to make it more exciting.

This dish turned out to be quite tasteless and lacked moisture. The rice was bland and unappetizing, even though I used fresh broccoli. I might consider using farro instead, as suggested in the magazine's version of the recipe.

I really enjoyed this recipe! I followed the instructions using farro, as suggested in the magazine. For my taste, I would consider adding extra farro and a bit more garlic, or even using fresh garlic instead. Overall, it was a quick and simple dish to make.
