Joe's Fusion Chicken Pad Thai Recipe

Ingredients

  • 1 pound boneless, skinless chicken breast halves, cut into bite-size pieces
  • Salt and ground black pepper to taste
  • cup white sugar
  • 1 teaspoon ground cayenne pepper
  • 3 tablespoons white wine vinegar
  • 6 tablespoons fish sauce
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 4 large eggs, lightly beaten
  • 1 (16 ounce) package Pad Thai rice noodles
  • cup fresh bean sprouts
  • 2 cups beef broth
  • cup chopped green onion

Directions

  1. Bring a large pot of water to a boil.
  2. Season the chicken pieces with salt and black pepper, then set aside.
  3. In a bowl, whisk together the sugar, cayenne pepper, white wine vinegar, fish sauce, and peanut butter until smooth.
  4. Heat olive oil in a large skillet or wok over high heat. Add the chicken and cook, stirring occasionally, until the outside is white but the inside is still slightly pink, about 3 minutes. Remove the chicken from the skillet and set it aside.
  5. Reduce the heat to medium-low. Add minced garlic to the same skillet and cook, stirring, until the garlic becomes translucent, about 1 to 2 minutes.
  6. Add the beaten eggs to the skillet with the garlic. Cook and stir for 2 to 3 minutes, or until the eggs are loosely scrambled.
  7. Pour the peanut sauce into the skillet and stir to combine with the garlic and eggs. Bring the sauce to a simmer.
  8. While the sauce simmers, add the Pad Thai rice noodles to the boiling water. Cook until the noodles are still slightly firm, about 5 minutes. Drain the noodles and set aside.
  9. Return the cooked chicken to the skillet with the egg and peanut sauce mixture. Simmer for an additional 5 to 8 minutes, or until the chicken is cooked through and the juices run clear.
  10. Add the bean sprouts, cooked rice noodles, and beef broth to the skillet. Stir well and bring the mixture to a simmer. Cook for about 10 minutes, or until the noodles are tender and most of the broth has been absorbed.
  11. Sprinkle chopped green onions on top and serve.

After following the original recipe, my wife complained that it had an excess of noodles. I've since modified it by using 1 1/2 lbs of chicken breast pieces, reducing the noodles to 3/4 lb, and adding 1 1/2 cups of beef broth. Substituting bean sprouts with 1 cup of frozen peas and 1 cup of stripped, diced carrots has transformed the dish into a more flavorful, meaty, and visually appealing meal. It stands alone as a complete and satisfying dish. To complement it, I recommend serving it with garlic dill pickles.

This recipe exceeded our expectations! After reading other reviews, we decided to cut down the sugar to 1/2 cup and used only about 2/3 of the rice noodles package. In hindsight, we could have reduced the sugar even more. I also included soy sauce in the sauce, which I felt was necessary. Substituting chicken broth for beef broth worked well for us. We didn't have green onions or cilantro for the classic pad Thai toppings, but we opted for crushed peanuts instead. Overall, this was a fantastic outcome for our initial try at making pad Thai.

Delicious flavor, but extremely high sugar content. After reading reviews, I decided to lessen the sugar to 1/2 cup and the fish sauce to 5 tablespoons. Surprisingly, it was still overly sweet and salty for my taste. I suggest starting with 1/4 cup of sugar and 3 tablespoons of fish sauce, then adjusting to your liking. The dish also ended up too watery for me, so next time I'll try using only 1 cup of water in my chicken broth mixture.

I'm not sure where I went wrong with this dish. It didn't look appetizing when served. The sesame seed oil was too overpowering, so I had to make changes to the sauce to balance it out. There was also not enough peanut butter, so its flavor was lost. Unfortunately, this recipe didn't work for me, and I won't be giving it another try.
