Blackened Catfish and Spicy Rice Recipe
Ingredients
- 1 cup white rice
- 2 cups water
- 1 teaspoon Cajun seasoning
- teaspoon hot pepper sauce
- 1 teaspoon ground thyme
- 1 teaspoon ground black pepper
- 1 teaspoon ground cayenne pepper
- 1 teaspoon salt
- teaspoon garlic powder
- teaspoon onion powder
- teaspoon paprika
- teaspoon dried dill weed
- teaspoon lemon pepper
- 2 (8 ounce) fillets catfish
- cup butter, melted
- 1 teaspoon lemon juice, or to taste
Directions
Step 1: In a saucepan, bring the rice, water, Cajun seasoning, and hot pepper sauce to a boil.
Step 2: Once boiling, reduce the heat to medium-low, cover the saucepan, and simmer for 20 to 25 minutes, or until the rice is tender and all the liquid has been absorbed.
Step 3: While the rice is cooking, combine the thyme, black pepper, cayenne pepper, salt, garlic powder, onion powder, paprika, dill weed, and lemon pepper in a bowl. Stir until well blended.
Step 4: Brush the catfish fillets with melted butter, then evenly sprinkle both sides of the fillets with the seasoning mixture.
Step 5: Heat any remaining melted butter in a large skillet over medium-high heat. Pan-fry the seasoned catfish fillets for 4 to 5 minutes per side, or until the fish easily flakes with a fork.
Step 6: To serve, place the catfish fillets over the seasoned rice. Pour any leftover butter from the skillet over the fish and sprinkle with lemon juice to taste.

As we are not fans of spicy dishes, I made some adjustments to the recipe. I decreased the amount of cayenne pepper to 1/4 teaspoon, sprayed the catfish with butter spray, and used melted butter for frying instead. I substituted dill seed for dill weed, and lemon pepper seasoning salt for added flavor. The dish turned out well, with a subtle hint of spice. I will definitely be making this again. Served with brown rice seasoned with Complete seasoning, salt, and pepper.

The dish turned out just as I had hoped for! This was my second attempt at preparing this tasty recipe. However, it lacked the level of spiciness I desired (I'm not great with spicy food), so I decided to incorporate an additional 1/2 tsp of cayenne to kick it up a notch.

I just cooked some delicious fish using redfish. I didn't have lemon pepper, so I substituted it with lemon zest and fresh dill from my garden. This Southern Louisiana girl absolutely adored it!

Here is the rewritten review: I absolutely loved this recipe. It has a nice kick of spiciness, so if you're not a fan of hot food, consider dialing it down a bit. The rice paired beautifully with the fish. I didn't have powdered onion, so I substituted with Adobo seasoning, which worked perfectly. I skipped drizzling butter on top because I felt it was already flavorful enough. The addition of lemon really brought all the flavors together seamlessly.

Great recipe! I followed it exactly, except I didn't have dill weed and lemon pepper on hand. I will definitely be making it again!
