Skillet Chicken Pasta Recipe
Ingredients
- (8 ounce) package spaghettini
- 5 tablespoons olive oil, divided
- 8 roma (plum) tomatoes, halved and sliced
- 1 teaspoon garlic powder
- teaspoon dried oregano
- 2 teaspoons dried basil
- 1 pinch salt
- 1 teaspoon ground black pepper
- 1 teaspoons white sugar
- 1 tablespoon ketchup
- 2 skinless, boneless chicken breasts, cut into thin strips
- 2 garlic cloves, crushed
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 1 cup sliced fresh mushrooms
- cup grated Parmesan cheese
Directions
Step 1: Bring a large pot of water to a boil over high heat. Stir in spaghettini and return to a boil. Cook the pasta for 6 to 8 minutes, until it is cooked through but still firm to the bite. Drain well and keep warm.
Step 2: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the tomatoes and cook until they soften and begin to break down. Stir in the garlic powder, oregano, basil, salt, pepper, sugar, and ketchup. Heat the sauce through, then set it aside.
Step 3: In a separate cast iron skillet, heat the remaining 3 tablespoons of olive oil over medium heat. Add the chicken and cook until browned. Stir in the crushed garlic and cook for an additional minute. Remove the chicken from the skillet and set it aside.
Step 4: Turn the heat to high and add the bell peppers, onion, and mushrooms to the skillet. Cook until the vegetables begin to soften. Stir in the browned chicken and continue cooking until the chicken is no longer pink in the center and the vegetables are tender, about 5 minutes.
Step 5: Toss the cooked chicken and vegetables with the tomato sauce and the hot pasta. Serve with a sprinkle of grated Parmesan cheese.

A tad plain, but to be expected. Sprinkle in some crushed red pepper for extra flavor. Skip the ketchup - Italians never use it to season their dishes. Opt for tomato sauce or paste instead. Ketchup in this recipe is a culinary offense.

I prepared this dish a few nights ago and it turned out delicious. Even my picky eater enjoyed it. The highlight of this recipe is definitely the flavorful cooked down tomato mixture. I mostly followed the recipe, but I made one significant change by using leftover pork roast instead of chicken. If I make this recipe again, I might reduce the amount of peppers as they were quite overpowering. I also plan to increase the quantity of the cooked down tomato mixture. I made a delicious dish using penne pasta, olive oil, a can of tomato sauce (no ketchup), one Italian sausage link, and three chicken cutlets with peppers and onions. I opted for less spice this time. Overall, the meal turned out to be very tasty.

Wonderful meal! It was a tad challenging for someone new to cooking like me, but not overwhelmingly so. My wife and I loved it, although the kids weren't as thrilled. I'll definitely make it again, but maybe on a night when the kids are at their grandparents' house. I made a few tweaks - I don't usually like bell peppers, so I roasted two red peppers and cut them into strips. Also, my grocery store doesn't stock spaghettini, so I used whole wheat linguine instead.

The seasoning is good until Step 5, but make sure to add a similar amount of extra seasoning when mixing it with the pasta to prevent it from tasting bland.

My husband and I were not fans of this recipe. We thought it was too watery and lacked flavor. Perhaps I didn't cook the tomatoes long enough? I even tried adding more Italian seasoning, but it still turned out tasteless. I have other similar recipes that are much more enjoyable.
