Coq au Vin Broth Fondue Recipe

Fondue Broth with Vegetables and Seafood

Ingredients (Serves 2)

  • 3 cups vegetable stock
  • cup dry red wine
  • cup sliced fresh mushrooms
  • 2 green onions, sliced
  • 2 cloves garlic, minced

Directions

Step 1: Pour the vegetable stock into a saucepan or fondue pot over medium heat and bring it to a simmer.

Step 2: Add the red wine, sliced mushrooms, green onions, and minced garlic to the pot. Let it simmer for about 15 minutes, or until the broth becomes aromatic.

Step 3: If using an electric fondue pot, set the heat to medium. If using a Sterno fuel fondue pot, partially cover the Sterno can to prevent the broth from heating too quickly.

Step 4: While the broth is simmering, prepare your vegetables, potatoes, meats, and other dippers by cutting them into bite-sized pieces.

Step 5: Insert dippers into the fondue pot using skewers. Shrimp and seafood cook quickly (1 to 2 minutes), while chicken and steak take a little longer. For vegetables, place them in the broth and remove them when they are tender.

I substituted dry white Burgundy wine for red wine in the broth and marinated the steak in a mixture of ginger, wine vinegar, sugar, garlic, light soy sauce, and Worcestershire sauce. The results were amazing, and everyone loved it!

I followed the recipe to a T, but to my disappointment, it turned out to be quite bland. I tried to salvage the dish by seasoning it with salt and pepper, but it still lacked any taste. Even the vegetables that were cooked along with the meat failed to add any flavor to the dish.
