Macaroni and Eggs Recipe

Ingredients

  • 1 cups elbow macaroni
  • 1 tablespoon unsalted butter
  • teaspoon paprika (Optional)
  • Salt and ground black pepper, to taste
  • 4 large eggs, lightly beaten

Directions

Step 1: Bring a large pot of lightly salted water to a boil.

Step 2: Cook the elbow macaroni in the boiling water, stirring occasionally, for about 8 minutes, or until the macaroni is cooked through but firm to the bite.

Step 3: Drain the macaroni and set aside.

Step 4: Melt the butter in a skillet over medium heat.

Step 5: Layer the cooked macaroni over the butter in the skillet, but do not stir.

Step 6: Season with paprika, salt, and black pepper.

Step 7: Pour the beaten eggs over the macaroni. Allow the eggs to cook without stirring for about 2 minutes, or until they begin to set.

Step 8: Stir the eggs and macaroni together, and continue to cook for another 5 minutes, or until the eggs are nearly set.

Step 9: Cover the skillet, remove it from the heat, and let it sit for 2 to 5 minutes until the eggs are fully set.

Cook's Notes:

  • If using leftover pasta, you can add the noodles cold to the skillet.
  • If you prefer to add fresh onion, garlic, or vegetables, cook them in the butter before adding the pasta to the skillet.
  • Dried herbs or spices can be added along with salt and pepper for extra flavor.

I prepared this dish myself when I was a child in Brooklyn, NY - and yes, I used ketchup! I absolutely enjoyed it. It's like a unique twist on Matzoh Brie, but with noodles instead of matzoh!
