Simple Lemon Chicken Recipe

Ingredients

  • Cooking spray
  • 4 skinless, boneless chicken breast halves
  • 2 cups apple juice
  • 2 lemons, juiced
  • 4 teaspoons cornstarch
  • 2 teaspoons chicken bouillon granules

Directions

Step 1: Heat a skillet sprayed with cooking spray over medium-high heat.

Step 2: Cook chicken breasts in the skillet until no longer pink in the center and the juices run clear, about 10 minutes on each side. An instant-read thermometer inserted into the center should read at least 165F (74C).

Step 3: Once cooked, cut the chicken into strips.

Step 4: In a separate skillet, whisk together apple juice, lemon juice, cornstarch, and chicken bouillon granules until smooth.

Step 5: Heat the skillet over medium heat, stirring constantly until the sauce thickens and becomes bubbly, which should take around 3 to 5 minutes.

Step 6: Continue to cook for an additional 3 minutes.

Step 7: Place the chicken strips into the apple juice sauce and simmer for 6 to 8 minutes before serving.

This is now my go-to Lemon Chicken recipe! The sauce is absolutely delicious! I did marinate the chicken in orange juice beforehand, which added a nice touch. It was also incredibly easy to put together.

I personally enjoyed this dish, although the rest of my family had mixed feelings about it. I decided to enhance the flavor by adding lemon zest while following the original recipe. We paired it with white rice and vegetables. I might give it another try and experiment with adding herbs like rosemary next time.
