Chicken and Chorizo Skewers Recipe
Grilled Chicken and Chorizo Skewers
These delicious grilled skewers bring together tender chicken, spicy chorizo, and a medley of colorful vegetables. Perfect for a summer cookout or a quick weeknight dinner!
Ingredients
- 2 skinless, boneless chicken breasts, cut into 20 pieces
- 8 ounces Spanish chorizo, cut into -inch pieces
- 1 tablespoon olive oil
- 1 tablespoon sherry vinegar
- 2 teaspoons chopped fresh oregano
- 1 pinch cayenne pepper, or to taste
- Salt and ground black pepper, to taste
- 1 red onion, cut into 1-inch squares
- 1 red bell pepper, cut into 1-inch squares
- 4 (12-inch) bamboo or metal skewers
Directions
Step 1: Preheat your outdoor grill to medium-high heat. Lightly oil the grate to prevent sticking.
Step 2: In a large bowl, combine the chicken and chorizo. Add olive oil, sherry vinegar, chopped oregano, cayenne pepper, salt, and black pepper. Stir everything together until the chicken and chorizo are well coated with the seasoning mixture.
Step 3: Thread the chicken, chorizo, red onion, and bell pepper onto the skewers, alternating the ingredients. Be sure that each piece of chicken is placed next to a piece of chorizo for even cooking and flavor.
Step 4: Place the skewers on a plate, cover with plastic wrap, and refrigerate for 15 to 30 minutes to allow the flavors to meld and the chicken to chill.
Step 5: Once the grill is ready, cook the skewers, turning occasionally, for about 10 minutes or until the chicken is thoroughly cooked and no longer pink inside.

These are fantastic just as they are! Next time, I'm considering going full caveman and adding some thick-cut bacon on them as well. Perfect for a party!

Fantastic! I followed the recipe exactly and it turned out amazing. I also included zucchini and added some minced garlic. I let the chicken and sausage marinate for a few hours before putting them on the skewers. The end result was absolutely delicious!

I decided to include baby corn along with the onion, and I believe that adding some pineapple chunks or watermelon chunks would have elevated the flavor even more.

I didn't skewer and grill the chicken and sausage. Instead, I roasted them on a sheet pan in the oven at 450 degrees for 15 minutes. Then I added the onions and peppers and roasted everything for another 12 minutes. The result was fantastic!

We are on vacation and couldn't get all the ingredients, so we improvised with dried oregano leaves, a splash of apple cider vinegar, and omitted the cayenne pepper. The result was fantastic! It was incredibly simple to prepare and we all enjoyed it.

We opted for a Polish kielbasa that we already had on hand. The only modification we made was including zucchini in the skewers, and they turned out delicious! One important tip to note is to cut the onion chunks large enough; I found mine to be a bit too small and difficult to thread onto the skewers.
