Amy's Amazing Baked Chicken Breasts Recipe

- 2 skin-on, boneless chicken breasts
- 4 ounces horseradish-chive compound butter
- 1 yellow onion, cut into 5 whole slices
- 2 cups chicken stock
- Salt and freshly ground black pepper, to taste
Directions
Follow these steps for a perfectly baked chicken breast with a delicious, savory flavor.
- Preheat the oven to 350F (175C).
- Using two fingers, gently loosen the skin on each chicken breast. Slice the horseradish-chive compound butter thinly and carefully stuff it under the skin, covering as much of the chicken as possible.
- Layer the onion slices on the bottom of a glass baking dish. Pour in the chicken stock around the onions.
- Place the chicken breasts on top of the onions, skin-side up. Season with salt and freshly ground black pepper to taste.
- Bake in the preheated oven for 30 minutes. Start basting the chicken with its own juices and rotate the chicken if the skin is not crisping evenly.
- Continue baking until the chicken is no longer pink in the center and the juices run clear, about 25 more minutes. Baste the chicken every 5 to 10 minutes to ensure even cooking. The internal temperature of the chicken should reach at least 165F (74C) when measured with an instant-read thermometer.

This has been the most disappointing recipe I've come across on this site. It was completely illogical and served as a valuable lesson that if a recipe doesn't make sense, it's likely not going to yield good results. For instance, the instructions called for placing spiced butter under the breast skin, yet the dish was baked in two cups of chicken broth with frequent basting - leaving me to wonder, where exactly did the butter end up?
