Cheesy Chicken and Rice Casserole

Ingredients
- Cooking spray
- 2 cups rice
- 1 cups shredded Cheddar cheese, divided
- 1 teaspoon ground black pepper
- teaspoon salt
- 4 skinless, boneless chicken breast halves (or more to taste)
- 2 (10.5 ounce) cans cream of chicken soup
- 3 cups water (or more as needed)
- 1 (1 ounce) package dry onion soup mix (such as Lipton)
Directions
- Preheat the oven to 350F (175C). Grease a 9x13-inch baking dish with cooking spray.
- Layer the rice: Spread the rice evenly across the bottom of the prepared baking dish.
- Cheese and seasoning: Sprinkle 1 cup of Cheddar cheese over the rice, then season with black pepper and salt.
- Arrange the chicken: Place the chicken breasts evenly on top of the rice and cheese mixture.
- Top with soup: Dot the chicken with rounded teaspoons of cream of chicken soup.
- Add water and onion soup mix: Pour the water over the chicken, then sprinkle the onion soup mix evenly on top.
- Bake: Place the dish in the oven and bake for 1 hour. Check the rice for doneness; if the water is completely absorbed, add cup more water to maintain moisture.
- Continue baking: Bake for an additional 30 minutes or until the chicken is no longer pink in the center, and the juices run clear. The internal temperature should reach at least 165F (74C) when measured with an instant-read thermometer.
- Final touch: Sprinkle the remaining cup of Cheddar cheese over the dish before serving.
