Chicken Walnut Cheese Wrapped in Bacon Recipe

Ingredients:

  • 2 boneless, skinless chicken breasts, halved horizontally
  • 8 ounces crumbled blue cheese
  • 6 ounces walnut halves
  • 8 slices bacon

Directions:

  1. Preheat your oven to 350F (175C).
  2. Pound the chicken slices until they are of even thickness, about 1/4-inch thick.
  3. Spread blue cheese and walnuts evenly on top of each chicken piece.
  4. Roll each chicken breast over the filling, making sure the filling stays inside.
  5. Place 2 slices of bacon side by side on a clean surface. Lay each chicken roll at one end of the bacon slices and roll the bacon around the chicken, securing it with toothpicks.
  6. Repeat this process with the remaining chicken rolls and bacon slices.
  7. Heat a skillet to medium-high heat and cook the bacon-wrapped chicken rolls for 4 to 5 minutes on each side, or until the bacon is browned and crispy.
  8. Transfer the chicken rolls to the preheated oven and bake for 25 to 35 minutes, or until the chicken is no longer pink in the center and the juices run clear.

This dish was fantastic! I decided to include cranberries in the mix and substituted regular bacon with turkey bacon. It turned out delicious without any additional seasonings. Thank you for sharing this recipe!

I tried following the recipe but it lacked any flavor at all! I even let my husband off the hook from eating it. Despite our love for Bleu cheese, it couldn't salvage this dish.

I followed the recipe exactly and the dish turned out to be delicious! Surprisingly, even my husband, who usually finds fault with dishes containing too much chicken, enjoyed it. The combination of cheese and nuts was a winner! This recipe is definitely going to become a regular in our meal rotation.

The dish was incredibly delicious, requiring no additional salt or seasonings. Surprisingly, I didn't even have to pound the chicken, and it turned out perfectly. Next time, I'll just use a bit less stuffing to suit my preference.
